Chicken Fried Steak with Gravy image

Steps:

  • For the steak: Begin with setting up an assembly line of dishes. Mix the milk with the eggs in one; the flour mixed with the seasoned salt, 1 1/2 teaspoons black pepper, paprika and cayenne in another; and the meat in a third. Then have one clean plate at the end to receive the breaded meat.
  • Work with one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Turn to coat. Place the meat into the milk/egg mixture, turning to coat. Finally, place it back in the flour and turn to coat (dry mixture/wet mixture/dry mixture). Place the breaded meat on the clean plate, then repeat with the remaining meat.
  • Heat the oil in a large skillet over medium heat. Add the butter. Drop in a few sprinkles of flour to make sure it's sufficiently hot. When the butter sizzles immediately, you know it's ready. (It should not brown right away, if it does, the fire is too hot.) Cook the meat, 3 pieces at a time, until the edges start to look golden brown, about 2 minutes each side. Remove the meat to a paper towel-lined plate and keep them warm by covering lightly with another plate or a sheet of foil. Repeat until all the meat is cooked.
  • After all the meat is fried, pour off the grease into a heatproof bowl. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the grease back to the skillet and allow it to heat up.
  • For the gravy: When the grease is hot, sprinkle the flour evenly over the grease. Using a whisk, mix the flour with the grease, creating a golden-brown paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
  • Pour in the milk, whisking constantly. Add the seasoned salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes. Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure gravy is sufficiently seasoned.
  • Serve the meat next to a big side of mashed potatoes. Pour gravy over the whole shebang!

2 large eggs
2 cups all-purpose flour

Old-Fashioned Chicken Fried Steak With Pan Gravy image

Steps:

  • Heat 1/4 inch oil in heavy skillet on med-high heat.
  • Combine 1 cup milk with egg. Pour into a shallow pie pan.
  • Season 1 cup flour with garlic powder, salt and pepper. Sift together in another pie pan.
  • Tenderize the steak well and trim off excess fat.
  • Dip the meat into egg mixture, then dredge in the flour mixture. Press flour into the meat. Repeat for a crispier coating.
  • When oil is hot, fry meat for 9-12 minutes.
  • This allows additional tenderizing of the meat. When fried meat is golden brown, drain on paper towels.
  • FOR GRAVY:.
  • Pour off all but 4 Tbsp of the cooking oil from skillet.
  • Over medium heat, slowly stir in the flour, stirring constantly.
  • Combine milk and water. Slowly add to skillet; stirring constantly. Loosen bits from bottom of pan while stirring. This is where the flavor is.
  • Add salt and pepper to taste. Bring to a boil. When bubbling, lower heat and simmer for 5 minutes.
  • Serve this dish with Mashed Potatoes.

Chicken Fried Steaks with Pan Gravy and Biscuits image

Steps:

  • 1. Preheat a large, heavy skillet over med-high heat.
  • 2. Put steaks on wax paper-lined work surface and cover with another piece of wax paper. Pound steaks to 1/4 inch thickness. Set steaks aside.
  • 3. Line work surface with more wax paper and pour 1/2 cup flour into each of two piles on opposite ends of this work space. Add cornmeal, paprika, salt and pepper to one pile of flour.
  • 4. Beat eggs and water in a shallow dish or pie plate.
  • 5. Cut steaks into 4 portions and coat first in the plain flour, then in egg, and then in the seasoned flour and cornmeal mixture.
  • 6. Add 2 T of oil to the hot skillet and brown 2 steaks at a time. As they brown, remove from the pan and add more oil as needed. When the last 2 portions are browned, add the first two back to the pan. Cover pan and lower heat to med-low and cook covered for 15 minutes.
  • 7. Remove steaks to a serving platter and pour off all but 2-3 T. of the drippings. Add 2 T of flour to the drippings and cook for 2 minutes. Whisk in broth and season with salt and pepper. Add half and half or cream and whisk into gravy. When the gravy bubbles, remove from heat.
  • 8. Serve steaks and warm biscuits with gravy on top.

  • Place 1 cup flour in a shallow bowl. In a separate shallow bowl, whisk eggs and 1/2 cup milk until blended. Sprinkle steaks with 3/4 teaspoon each salt and pepper. Dip in flour to coat both sides; shake off excess. Dip in egg mixture, then again in flour., In a large cast-iron or other heavy skillet, heat 1/4 in. of oil over medium heat. Gradually whisk in water and remaining milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Serve with steaks.

  • 1. PREP/PREPARE
  • 2. Chef's Note: There are a ton of good biscuit recipes out there, and you might have one of your own. This one is mine: https://www.justapinch.com/recipes/bread/biscuits/awesome-cast-iron-buttermilk-biscuits.html?r=7
  • 3. Chef's Note: I like to make my own cube steak by buying some top round or top sirloin, and pounding the heck out of it with a meat tenderizer. You can, however, purchase pre-tenderized cube steak directly from your butcher. But, in my opinion, it's more fun to pound out your own.
  • 4. Gather your Ingredients (mise en place).
  • 5. Add the buttermilk and the hot sauce to a bowl, or pie plate.
  • 6. Add the flour, along with some salt, pepper, and the optional garlic powder, to another plate.
  • 7. Chef's Tip: I don't like a very salty crust, so I'll usually add a pinch or two of salt, and at least a teaspoon of white pepper. And I might even be persuaded to add a pinch of two of cayenne.
  • 8. Add the lard to a skillet (I prefer cast iron), and bring the heat up to 325f (165c).
  • 9. Coat the cube steaks in the flour mixture.
  • 10. Knock off the excess and then dredge in the buttermilk.
  • 11. Add the steak back into the flour, and thoroughly coat.
  • 12. Add the breaded cube steaks to the hot pan.
  • 13. Cook until golden brown, about 2 - 3 minutes per side.
  • 14. Remove from the pan, and allow to drain on paper towels.
  • 15. Chef's Tip: To keep the steaks warm, while you make the gravy, preheat an oven to 200f (95c), and place them in the warm oven until needed.
  • 16. Remove all but two tablespoons of the lard from the pan, and then add two tablespoons of the dredging flour.
  • 17. Whisk over medium heat until the fat and the flour incorporate.
  • 18. Add some milk, a bit at a time, and continue to whisk until you achieve the desired consistency.
  • 19. Season the gravy with some salt and pepper, and reduce the heat to low.
  • 20. PLATE/PRESENT
  • 21. Fork split one of the biscuits and place a chicken-fried steak on top.
  • 22. Chef's Note: I prefer to serve the gravy on the side, but you could always drizzle the gravy over the top, and serve them open faced.
  • 23. Serve while still nice and warm. Enjoy.
  • 24. Keep the faith, and keep cooking.

1 lb cube steak, tenderized, and cut into 4 equal pieces
1 c buttermilk
1 tsp hot sauce, i prefer frank's
1 1/2 c flour, all-purpose variety

Chicken-Fried Steak (Chicken With Creamy Gravy) image

Steps:

  • Season the chicken breasts with black pepper.
  • In a shallow dish combine crushed cracker crumbs with flour 1 teaspoon seasoned salt, 1/2 teaspoon black pepper, cayenne pepper (if using) and baking powder.
  • In another shallow dish whisk together eggs with 3/4 milk.
  • Dredge the chicken breasts in the cracker mixture then dip in the egg/milk mixture, then dredge AGAIN in the cracker mixture.
  • Pour the oil into a large skillet and heat to 360 degrees F.
  • Fry the breasts in hot oil for about 3-4 minutes on each side or until golden brown; remove to a wire rack and cover lightly with foil.
  • Carefully drain oil but reserve the browned bits in the bottom of the skillet along with a couple tablespoons of the oil.
  • In a bowl mix together 4 cups half and half cream, 1/4 cup flour 1 teaspoon seasoned salt and 1 teaspoon black pepper; whisk until combined, then add to the reserved drippings in the skillet, cook whisking constantly over medium-high heat for about 10 minutes or until thickened.
  • Serve the creamed gravy with the breasts.

Quick Chicken-Fried Steak With Pan Gravy image

Steps:

  • Combine 1/2 C flour and 1 tsp salt, 1 tsp pepper and 1 tsp paprika on a plate.
  • Stir with fork until well blended.
  • Put 1/2 C milk in bowl.
  • Dip steak in milk first, then coat generously with flour mixture.
