THE BEST PARMESAN CHICKEN BAKE

This chicken Parmesan is done casserole style (so, no breading or frying!), but still offers up that irresistible combination of tender chicken, crunchy/cheesy coating, and flavorful sauce.

The Best Parmesan Chicken Bake image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
  • Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
  • Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 4-6 minutes on each side or until a thermometer reads 170°; remove and keep warm., In the same skillet, saute the mushrooms, garlic, basil and Italian seasoning until mushrooms are tender. Stir in spaghetti sauce and wine. Add chicken; cover and simmer for 10 minutes or until heated through. Serve with pasta.

Steps:

  • 1. Oil bottom of casserole dish with olive oil.
  • 2. Wash chicken and roll in bread crumbs, place in dish.
  • 3. Pour marinara sauce over top of chicken and sprinkle with italian spices. Put cheese over top.
  • 4. Cover dish with tinfoil and bake at 400 degrees for 1 hour.

Steps:

  • Preheat oven to 375*.
  • Spray a 9x13 baking dish or pan with a nonstick cooking spray.
  • Saute the Onions and Zucchini.
  • In a large bowl mix together the cooked and diced Chicken, the sauteed vegetables, Diced Tomatoes, diced Roasted Peppers, and Mushrooms, set aside.
  • Using the prepared dish or pan, layer 1/2 the Chicken Mixture followed by 1/2 the Marinara sauce, then 1/2 the Ricotta cheese, and 1/2 of the Shredded Cheese.
  • Repeat the same sequence again using the last 1/2.
  • Sprinkle the top with the Parmigiano Reggiano cheese and then the breadcrumbs.
  • Bake Casserole for 40 minutes or until hot and bubbly.
