Garlic-Butter Zoodles with Chicken Meatballs image

Steps:

  • Mix ground chicken, 1/2 cup Parmesan cheese, egg, 2 garlic cloves, parsley, and red pepper flakes together in a large bowl. Season with kosher salt and black pepper and form into tablespoon-sized meatballs.
  • Heat olive oil in a large skillet over medium heat. Cook meatballs until golden brown on all sides and no longer pink in the centers, about 10 minutes. Transfer to a plate and wipe the skillet with a paper towel.
  • Melt butter in the same skillet; add remaining 3 garlic cloves and cook until fragrant, about 1 minute. Add zucchini noodles to the skillet and toss into the garlic butter; squeeze in lemon juice. Add meatballs and heat just until warmed through. Garnish with remaining Parmesan cheese to serve.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper; set aside.
  • Combine ground chicken, bread crumbs, egg, soy sauce, ginger root, green onions, garlic, and red pepper flakes in a large bowl. Using a 2-teaspoon cookie scoop, shape the mixture into 1-inch balls and place on the lined baking sheet.
  • Bake in the preheated oven until no longer pink in the center, about 12 minutes. Remove from the oven and set aside.
  • Heat olive oil in a large pot over medium heat, and add curry paste. Cook until fragrant, 1 to 2 minutes. Add red onion and cook for 2 minutes. Add chicken stock, coconut milk, bok choy, cilantro, fish sauce, and honey; stir until well combined. Bring to a boil.   • Meanwhile, in a large bowl combine the ground chicken, ginger, cilantro, and salt. Form into 16 meatballs.
  • In a large skillet, heat 1 tblsp of the coconut oil over medium heat. Add the meatballs. Cook, turning occasionally, until browned and cooked through, about 10 minutes. Transfer the meatballs to a plate.
  • Turn off the heat.
  • Add the remaining 2 tblsp coconut oil and chili pepper to the still warm pan. Stir in vinegar, honey, and lime juice.
  • Divide lettuce, noodles, and carrots among bowls. Top with meatballs, and drizzle with pan sauce.

Chicken Meatball and Noodle Soup image

Steps:

  • In a bowl beat egg. Mix in bread crumbs, salt and pepper. Mix in ground chicken. With damp hands, shape into 1-inch balls. Bake on lightly greased cookie sheet at 350°F for 15 minutes turning once. Let drain on paper towels.
  • Meanwhile in Dutch oven heat oil (medium high).
  • Cook leeks and garlic about 3 minutes or until soft.
  • Add stock and vegetables, dill and gingerroot and bring to boil.
  • Reduce heat and simmer for 5 minutes.
  • Stir in noodles and meatballs and cook 8-10 minutes or until vegetables are tender.
  • Remove gingerroot. Taste and adjust seasonings. Garnish each serving with dill (before serving).
  • Soup can be cooled and frozen in airtight containers up to 2 weeks.

  • Hear a large pot over medium-high heat. Add butter; swirl to coat. Add half each of the chicken and ginger and sauté for 2 minutes or until chicken is no longer pink inside, transfer to a bowl (some ginger will stick to pot). Repeat with remaining chicken and ginger. Set aside.
  • Add broth, soy sauce, vinegar and chili sauce to pot; increase heat to high and bring to boil scraping up brown bits. Stir into mushrooms, celery and noodles.
  • Whisk cornstarch into milk; stir into pot.
  • Reduce heat to medium and cook, stirring, for 5-10 minutes or until bubbling and noodles are tender.

Steps:

  • Season chicken with five-spice powder.
  • Heat grapeseed oil in a cast iron skillet over medium-high heat. Add chicken and cook and stir until browned and no longer pink in the center, 7 to 10 minutes. Remove from the skillet and cut into bite-sized pieces.
