CHICKEN PARMESAN CASSEROLE
I came up with this easy casserole idea instead of making homemade Chicken Parmesan. Enjoy!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Stir together the rotini, chicken, and mozzarella cheese in a large casserole dish. Pour the marinara sauce over the pasta mixture; sprinkle with bread crumbs. Cover the dish with aluminum foil.
- Bake in the preheated oven until the cheese is entirely melted, about 35 minutes.

CHICKEN PARMESAN WITH ROTINI
Steps:
- Cook pasta as directed. Meanwhile, combine cracker crumbs, Parmesan, and oregano in a pie plate. Lightly beat the egg white in another pie plate. Dip chicken in egg whie, then roll in crumb mixture until evenly coated. Spray a large nonstick skillet with cooking spray and set on medium heat. Add chicken and cook on each side until cooked through. Spoon 1 cup of spaghetti sauce over chicken and top with cheese. Cover skillet with a lid and reduce heat to low. Simmer 3 minutes, or until cheese is melted. Drain cooked pasta and return to pan. Add remaining spaghetti sauce and toss to coat. Cook on medium heat until heated through, stirring occasionally. Spoon onto serving plates and top with the chicken.

- Cook rotini according to package directions. Meanwhile, in a large nonstick skillet, heat oil over medium heat. Add chicken; cook and stir until no longer pink. Remove from pan., Add mushrooms and carrots to same skillet; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in broth, cream cheese and lemon juice; stir until cheese is melted., Drain rotini; add to vegetable mixture. Stir in chicken, peas, Parmesan cheese, basil, lemon zest, salt, pepper and red pepper flakes; heat through.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- Combine half-and-half and butter in a saucepan over medium heat. Boil gently, stirring, until mixture has reduced to 1 1/2 to 1 2/3 cups. Remove pan from heat; whisk in cheese, basil, oregano, chives, and parsley. Cover, and set aside.
- Saute chicken in a large skillet until lightly browned on both sides. Stir in green and red bell pepper, and cook until vegetables are tender, and chicken is no longer pink in the middle.
- In a casserole dish, combine the hot cooked pasta, chicken mixture, and sauce. Mix well, and serve immediately.
