BAKED MUSHROOM CHICKEN

This mushroom chicken bake recipe is the perfect way to dress up a standard weeknight dinner. It's a recipe I can count on to yield tender and flavorful results every time. -Barbara McCalley, Allison Park, Pennsylvania

Baked Mushroom Chicken image

Steps:

  • Flatten each chicken breast half to 1/4-in. thickness. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess. , In a large skillet, brown chicken in 2 tablespoons butter on both sides. Transfer to a greased 11x7-in. baking dish. In the same skillet, saute mushrooms in the remaining butter until tender. Add the broth, salt and pepper. Bring to a boil; cook until liquid is reduced to 1/2 cup, about 5 minutes. Spoon over chicken., Bake, uncovered, at 375° until chicken is no longer pink, about 15 minutes. Sprinkle with cheeses and green onions. Bake until cheese is melted, about 5 minutes longer.

1/4 cup all-purpose flour
3 tablespoons butter, divided
1 cup sliced fresh mushrooms
1/2 cup chicken broth
1/4 teaspoon salt

1/3 cup shredded part-skim mozzarella cheese
1/3 cup grated Parmesan cheese
1/4 cup sliced green onions

Chicken & Rice Bake without Canned Soup Recipe - (4.5/5) image

Steps:

  • In one bowl, combine the cream soup ingredients and in another bowl combine the onion soup ingredients. Spray a 9"×13" baking dish with cooking spray and place the uncooked rice across the bottom. Combine the water and chicken soup base (or use an equivalent amount of chicken stock) with 1/2 of the onion soup. Pour over over the rice. Place the chicken parts throughout the pan with the pieces not touching. If you use chicken with skin on it, place the skin side up. Sprinkle the remaining onion soup substitute over the chicken. Then pour the cream soup substitute on top of the chicken, evenly distributed among all of the pieces. Sprinkle all with paprika. Bake at 375 degrees for 45 minutes or until liquid is absorbed and chicken is done (poke a piece of chicken in the fattest part with a fork and press down...if the liquid comes out pink, keep cooking).

CREAM SOUP SUBSTITUTE:
1/3 cup powdered milk
2 tablespoon cornstarch
1 teaspoon dried onion flakes
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon pepper
LIPTON ONION SOUP SUBSTITUTE:
1/4 cup dried onion flakes
2 tablespoons beef bouillon granules
1 teaspoon dried minced garlic
1/4 teaspoon parsley flakes
1/8 teaspoon paprika
1/8 teaspoon pepper
ADDITIONAL INGREDIENTS:
3 cups water (or use chicken stock instead of water and chicken soup base)
1 teaspoon chicken soup base or bouillon granules
1 cup uncooked white rice
6 chicken thighs, skinless (feel free to use your favorite chicken parts or a cut up whole chicken)
1 teaspoon paprika

BAKED CHICKEN AND RICE WITH THREE SOUPS

This is a favorite recipe of my family's. We have been cooking this recipe for 3+ generations and this is known as comfort and/or soul food for us. The rice is the best part of the recipe if not for the juicy and tasty chicken. I hope that you try and enjoy this family favorite.

Baked Chicken and Rice With Three Soups image

Steps:

  • Preheat oven to 375 degrees.
  • Combine the three soups, rice and water in a casserole dish, mixing until the ingredients are thoroughly combined.
  • Place the chicken breasts on top of the rice.
  • Sprinkle the chicken and the rice mixture with the salt, pepper, garlic powder, Thyme and paprika to taste.
  • Place the pieces of butter evenly over each piece of chicken, so that each piece gets two portions of butter.
  • Bake the casserole at 375 for about 25-30 minutes or until the skin on the chicken is golden brown and the rice is hot, bubbly and fully cooked.
  • Serve immediately.
  • This dish can also be made with whole cut-up chicken pieces (i.e. drumsticks, thighs, etc.) in lieu of only chicken breasts. I just make it this way so no one fights over the chicken breasts which they always seem to do if I do it the other way.

  • In pot, add chicken, cover with cold water plus at least 2 inches more, add bay leaf, and bring to a boil over medium-high heat. Turn down to a simmer, and simmer chicken, uncovered, until done and fall apart tender. (About 1 1/2 hours or more.) When done, remove chicken to a bowl and cover so it doesn't dry out. Remove bay leaf from pot, and add 1 1/2 - 2 cups stock to small saucepan. Bring reserved broth to a full boil and boil until reduced to 1 cup. (Freeze any leftover stock or discard.)
  • In large, deep frying pan, melt butter over medium heat, add celery and onion, sauté until tender. Add mushrooms and sauté just one minute longer, stirring.
  • Stir in flour well, and cook until bubbly. Cook and stir for 2 minutes to cook out the raw flour taste. Slowly stir in reserved cup of chicken stock and milk until blended and not lumpy. Stir in salt, pepper and garlic powder. Heat until boiling stirring constantly. Boil and stir for 1 minute. Remove from heat.
