GRAPEFRUIT CHICKEN
This is a twist on orange chicken and is a favorite of my family. You can use chicken pieces or even a turkey.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place chicken into a roasting pan, and squeeze the juice from the grapefruit halves all over and inside the chicken. Drizzle chicken with olive oil, and sprinkle with seasoned salt. Cover with aluminum foil.
- Bake in the preheated oven, covered, for 45 minutes; remove foil, and bake until meat is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

- In a large nonstick skillet, saute chicken in oil until browned on both sides. , In a small bowl, combine the salsa, cranberries, water, honey, garlic, cinnamon and cumin; mix well. Pour over chicken. Cover and cook over medium-low heat for 10-15 minutes or until a thermometer reads 170°. Serve with couscous. Sprinkle with almonds.

GRAPEFRUIT GRILLED CHICKEN

- Prepare the grapefruit. Juice one grapefruit into a liquid measure. On the second grapefruit, slice the bottom and top to level it, then starting at the top where the white pith ends and the pink flesh begins, cut between the 2 layers at an angle from the top to bottom all the way around to remove the skin and expose the flesh, making sure to slice off all the pithy white parts. Holding the grapefruit in one hand, release the wedges by using the knife to slice on either side of each segment.
- Place these wedges in a medium saute pan. Squeeze the remaining flesh and membranes of the grapefruit to release any juice into a bowl. Add the sugar and honey. Whisk to combine, then taste. If needed, add a teaspoon or more brown sugar to take away the tart of the grapefruit. Pour half of the mixture into a saute pan with the grapefruit wedges. Bring to a simmer and cook until liquid is reduced and slightly thickened, about 8 minutes.
- To the remaining half add the oil, 1 teaspoon salt, and a few grinds of black pepper. Whisk to combine and pour into a plastic bag. Add the chicken, seal and toss a bit before resting on the counter for 25 to 30 minutes. Cook's Note: Any longer and the acid in the grapefruit juice will "cook" the chicken in the marinade and ruin it.
- Heat a grill pan to medium high and brush lightly with oil. Remove the chicken from the plastic bag and shake off the excess marinade. Place the smooth-side down on the grill and cook 2 to 3 minutes, then flip and cook 2 minutes more. Remove to a serving plate and pour the grapefruit sauce over the top.
RUBY RED GRAPEFRUIT SALSA
From Mr. Food...he suggests serving over grilled meats or fish, or using as a dip for tortilla chips. The 4 hours cooking time is actually chilling time.

- Mix the grapefruit, bell pepper, onion, jalapeño, cilantro, and sugar together in a medium bowl.
- Combine the lime juice and olive oil (mix well) and pour over the grapefruit mixture.
- Toss well, cover, and chill for at least 4 hours before serving.

GRILLED CHICKEN WITH CITRUS SALSA

- In a shallow bowl, combine 1/4 cup of each of the lime juice, olive oil, and jalapeno slices. Rub chicken with salt and pepper, add to marinade. Add a dash of tequila. Marinate for at least half an hour.
- In a medium bowl, combine citrus fruit, scallions, tomatoes, remaining lime juice and olive oil, zests, salt and pepper, diced jalapeno, cilantro, tomatillos, and remaining tequila. Set aside.
- Remove chicken from marinade. Cook on a hot grill for about 5 minutes on each side, or until cooked through. Remove from grill and let stand 5 minutes.
- Divide greens among four plates. Slice chicken and arrange on top of greens. Spoon salsa over each salsa and serve immediately.
GRAPEFRUIT SALSA

Steps:
- Using a knife, slice off the top and bottom of the grapefruit.
- Then start slicing away the peel starting from top to bottom; use the last slice as a guide for cutting away the peel.
- Repeat until completely peeled.
- Remove any remaining white parts (the bitter pith).
- Holding the peeled grapefruit over a small bowl, start cutting away the grapefruit segments (the bowl will catch the juices).
- Slice away the fruit by cutting between the membrane.
- Set aside the grapefruit segments.
- Into the small bowl, squeeze the juice from the grapefruit membrane.
- Add the green onion, mint, jalapeno, red wine vinegar, honey, extra virgin olive oil and pepper; mix thoroughly.
- Add the grapefruit segments.
- Serve or refrigerate until ready to use.

- Remove skin and white pith from each grapefruit with a knife. Working over a medium bowl, cut grapefruit segments from their surrounding membranes and place them in the bowl. Squeeze juice from the membranes into the bowl. Add scallion greens, lime zest, lime juice and honey. Strain 1/3 cup of the juice from the salsa into a measuring cup and set aside.
- Pat chicken dry and sprinkle both sides with chile powder and salt. Heat oil in a large nonstick skillet over medium heat. Add the chicken and cook until browned and cooked through, 3 to 4 minutes per side. Transfer to a clean plate.
- Meanwhile, add the reserved 1/3 cup juice and scallion whites to the pan, scraping up any browned bits with a wooden spoon. Bring to a simmer. Stir in butter and remove from heat.
- Return the chicken and any accumulated juices to the pan and turn to coat with the sauce. Serve the chicken topped with the sauce and the salsa.

- In a medium pot, place all sauce ingredients except grapefruit sections. Bring to a boil and simmer for ten minutes then remove from heat.
- In a large skillet or fry pan, melt butter in oil over medium high. When the butter starts to froth, place half the chicken pieces skin side down and cook four minutes. Flip and cook four more minutes (we recommend that you use a splatter screen to avoid a mess). Move seared chicken to a 9X13 baking dish skin up. Cook second half of chicken the same way and place in casserole dish with the first half.
