CHILE CHEESE CASSEROLE
This breakfast dish was inspired by the Mexican dish, chilaquiles. By using baked tortilla chips, a mixture of eggs and egg whites and just a bit of sharp Cheddar and pepper jack, the fat is low while the flavor is high.

Steps:
- Preheat the oven to 375 degrees F. Lightly coat a rectangular 2-quart baking dish with nonstick cooking spray. Coarsely crush the chips by hand and spread half of them into the bottom of the baking dish.
- Whisk the egg whites, eggs, milk, ancho powder, and pepper in a large bowl until well combined. Stir in the chopped chiles, chopped cilantro, and 1/4 cup each of the Cheddar and pepper jack cheeses; pour into the pan. Sprinkle the remaining chips over the egg mixture. Bake until the casserole is set around the edges but a little loose in the center, 20 to 25 minutes.
- Sprinkle with the remaining 1/4 cup of each cheese and continue to bake until the cheeses are melted and the casserole is set in the center, about 10 minutes. Let stand 10 minutes. Serve with the salsa and, sour cream, if using. Garnish with whole cilantro leaves.

This is definitely a freeze ahead recipe option. You can freeze after you put together and just heat from freezer for approx 20 additional minutes!

- Cook pasta according to directions, omitting salt and undercooking by 2 minutes.
- Drain Meanwhile, heat oven to 375 F degrees.
- Grease 12 cup oven-proof casserole.
- Mix pasta, sauce, cottage cheese, sour cream, spinach, scallions, salt, pepper in a bowl.
- Spoon into casserole and top with cheese.
- Bake, covered for 20 minutes, uncover and continue baking for about 10 minutes or until temperature registers 150 F degrees.

- Preheat oven to 350°.
- Prepare pasta according to package directions.
- Place pasta and chicken in a large bowl.
- Melt butter in a medium saucepan over med-high heat.
- Whisk in flour; cook, whisking constantly, 1 minute or until smooth.
- Gradually whisk in milk until smooth.
- Bring mixture to a boil, decrease heat to med-low, and gradually stir in cheddar cheese until smooth.

- Preheat oven to 350F.
- Cook noodles and set aside.
- Put pepperoni in a fry pan and cook lightly until grease comes out, do not pour off grease.
- Add garlic, tomatoes and the rest of the vegetables, cook for a couple minutes.
- Add spices and stir around.
- Put noodles in a 9" x 13" greased casserole dish.
- Pour the tomatoes, pepperoni, cheese and tomato juice over noodles and stir lightly.
- Cover with foil and bake for 45 minutes.
- Remove foil and add more cheese if you like and bake for another 5 or 10 minutes, until cheese has browned.
- Enjoy!

A super easy, yummy, kid-friendly pasta casserole. My little sister and I were making lunch when we made up this casserole. She doesn't like hamburger, but she is a huge pasta and turkey fan. It goes together really quickly if one person makes the turkey part and another person makes the noodle part. Refrigerate leftovers.

- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
