CHILI AND HONEY STEAK
Here is a really quick marinade for steak that tastes great with little fuss. I served my steak over wasabi, pesto mashed potato with asparagus topped with egg and honeyed breadcrumbs on the side. I know wasabi and pesto sounds like a weired combination but it actually goes really well together and makes for wonderful flavoured mash.

Steps:
- Combine all ingredients in a bowl or storage container, add steaks, marinade for several hours.
- BBQ, Grill or cook steaks on oiled grill plate until desired doneness. (my steaks were about 11/2 inches thick and it is about 5-6 minutes aside for medium rare.) I baste the the steaks twice during cooking with marinade.

- Preheat broiler. Place the first 5 ingredients in a greased 15x10x1-in. baking pan. Toss with 1 tablespoon oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Broil 4 in. from heat 10-12 minutes or until vegetables are tender and begin to char, turning once. , Meanwhile, mix salt, pepper, cumin, chili powder and the remaining oil; rub over both sides of steak. Grill, covered, over medium heat or broil 4 in. from heat 6-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 5 minutes., For salsa, chop broiled onion and jalapenos; place in a small bowl. Stir in tomatoes and lime juice. Thinly slice steak across the grain; serve with salsa, broiled peppers, couscous and lime wedges.

CHILI FLANK STEAK
I started making this recipe when we moved from Idaho to Kentucky. It gets so hot here that we use our outdoor grill as often as possible to keep the kitchen cool. - In a bowl, combine the first seven ingredients. Pour half of the marinade into a shallow dish; add the steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with reserved marinade.

- Prepare sauce: In a medium saucepan, bring water to boiling. Add onion, garlic and chili powder. Reduce heat. Simmer, covered, for 5 minutes or until tender. Stir in tomato sauce, vinegar, honey, salt and pepper. Return to boiling, stirring constantly. Boil for 5 minutes or until slightly thickened.
- Prepare steak: Trim fat from meat. Score both sides of steak in a diamond pattern by making shallow diagonal cuts at 1-inch intervals. Brush lightly with some of the sauce. For a charcoal grill, place steak on the rack of an uncovered grill directly over medium coals. Grill for 17 to 21 minutes or until medium doneness (160 degrees F), turning once halfway through grilling and brushing with the sauce during the last 5 minutes of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place steaks on grill rack over heat. Cover and grill as above.)
- In a small saucepan, reheat the remaining sauce until bubbly. To serve, thinly slice steak across grain. Pass warmed sauce.

- Juice half of the lemons and quarter the other half lengthwise. Deseed and slice chili into fine rings. Mix honey, lemon juice, olive oil, chili, and pepper. Salt steak well on both sides.
- Lightly crush whole, unpeeled garlic cloves with the back of the knife. Heat a large grill pan with some sunflower oil over high heat, add the steak, sear well, approx. 1 min. either side and continue to fry for approx. 6 min, turning the steak over in the middle of the cooking time. Lower the heat, add garlic to the pan, and fry for approx. 1 more min. Add butter, let melt, add lemon wedges and baste steak continuously for 1 min. Add the honey-lemon mixture to the melted butter and continue to baste the steak with the mixture for 2 more min.
- Remove steak from the heat and let it rest for approx. 5 min. Slice across the grain, serve on a plate with the whole garlic and lemon wedges, and drizzle on the sauce. Garnish with fresh mint leaves. Enjoy!
