CHINESE NOODLES & ZUCCHINI

Chinese Noodles & Zucchini image

Steps:

  • Bring a medium sized saucepan of water to a boil.
  • Add noodles and cook 3 minutes for dried or 1 minutes for fresh.
  • Drain.
  • Mix oyster sauce, vinegar, and sugar together.
  • Spray a wok or skillet with vegetable oil and heat.
  • Add zucchini and garlic.
  • Stir fry for 3 minutes.
  • Add drained noodles and continue to stir fry until noodles begin to crisp.
  • Pour oyster sauce mixture into the middle of wok, and toss well; making sure all of the noodles are coated with sauce.
  • Spoon onto a serving platter or individual plates and sprinkle with chopped cilantro.

1/4 lb fresh Chinese noodles or 1/4 lb dried chinese noodles
2 tablespoons chinese oyster sauce
2 tablespoons rice wine vinegar
1 teaspoon brown sugar
vegetable oil cooking spray
3/4 lb zucchini, sliced,about 3 cups
2 cloves garlic, crushed
1/4 cup chopped fresh cilantro

ZUCCHINI 'NOODLES'

A tasty and fairly simple way for people on a gluten-free or wheat-free diet to enjoy a noodle dish. I usually use 4 zucchini and 2 summer squash for a colorful mix.

Zucchini 'Noodles' image

Steps:

  • Cut zucchini into thin, noodle-like strips (a mandoline works well for this). Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
  • Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
  • Heat margarine in a large skillet over medium high heat. Add zucchini and garlic; cook and stir until just tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.

Cook garlic until lightly browned. Add in chicken. Cook chicken until almost completely cooked. If pan becomes too dry, add a little water.
  • When chicken is almost cooked, add in carrots and bell peppers. Cook until vegetables are tender and chicken is completely cooked. Add in zucchini noodles and pour sauce over noodles. Stir and toss until everything is evenly coated and cook until zucchini noodles are tender but still crisp (about 2-3 minutes). Dish out and serve immediately.

  • Place a large sauté pan or wok over medium-low heat. Add 2 tablespoons olive oil and and heat it for 1 minute. Add the garlic and ginger and cook for 2 minutes, stirring constantly.
  • Add the shrimp to the pan and cook, stirring as needed, until the shrimp are cooked throughout and pink on all sides, about 3 minutes. Season the shrimp with salt and pepper and then transfer them to a bowl, leaving any liquid in the pan.
  • Increase the heat to medium. Add the remaining 1 Tablespoon of olive oil to the pan, then add the bell pepper, carrots, red onions and snow peas and cook, stirring constantly, for 3 to 4 minutes until the vegetables are crisp but tender. Add the prepared sauce and cook, stirring constantly, for 2 minutes until the sauce thickens slightly. Return the shrimp to the pan, stirring to combine, then add the zucchini noodles and cook, tossing to coat, for 1 minute.
