CHINESE SPINACH SALAD
Adapted this recipe from one for cooked spinach that was in our local paper years ago. The dressing is easily doubled. Water chestnuts are a bit bland. To give them a flavor boost, I marinate them in a little of the dressing for 15 - 20 minutes.

- 1. Place ingredients for the dressing in a microwave safe, one cup measure. Heat in the microwave 20 - 30 seconds; just until warm. Whisk together.
- 2. Place water chestnuts in a small bowl. Drizzle on enough dressing to coat. Let stand 15 - 20 minutes
- 3. Divide spinach, mushrooms, onion slices, and tomato between 2 salad plates. Add water chestnuts. Whisk dressing, drizzle over salad and garnish with toasted slivered almonds.
ORIENTAL SPINACH SALAD
This is a refreshingly different and easy salad that I have made many times. It comes from an old cookbook of mine entitled "The Complete Encyclopedia of Chinese Cooking.

- Combine sesame oil, sugar, vinegar, soy sauce, mustard and sesame seeds.

SPINACH SALAD WITH BLUE CHEESE DRESSING

- Preheat the oven to 350 degrees F. Soak the red onion in a small bowl of ice water, about 30 minutes. Drain and pat dry.
- Meanwhile, make the croutons: Mash the anchovies with a fork. Combine the olive oil, mashed anchovies, 1 grated garlic clove and a pinch each of salt and pepper in a medium bowl. Let stand 5 minutes. Add the torn bread and toss with your hands until the bread absorbs the oil. Spread on a baking sheet and bake, stirring halfway through, until golden brown and crisp, 20 to 25 minutes. Let cool.
- Whisk the buttermilk, sour cream, blue cheese, vinegar, parsley, the remaining grated garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl until combined. Add the spinach, lettuce, cucumber, red onion and croutons; toss well.
EASY AND AWESOME SPINACH SALAD
This is a very easy spinach salad to make. The dressing has some unusual ingredients but is very delicious. I never have leftovers at potlucks when I take this salad.

- Place the bacon into a skillet over medium heat, and cook until browned and crisp, turning often, about 10 minutes. Transfer the bacon to paper towels to absorb excess grease. Crumble the bacon when cool.
- Place the spinach into a large salad bowl, and sprinkle with the bacon, hard-cooked eggs, and onion. Gently toss the salad.
- In a bowl, whisk together the sugar, ketchup, vegetable oil, vinegar, and Worcestershire sauce until the sugar has dissolved. Pour the dressing over the salad, and toss thoroughly to combine all ingredients.

- Combine reserved liquid from mandarin oranges, canola oil, olive oil, mustard, cloves, and Chinese five-spice powder in a jar with a tight-fitting lid; seal jar and shake vigorously until the dressing emulsifies.
- Melt butter in a saucepan over medium heat. Stir pecans and sugar into the butter; let simmer until hot, 1 to 2 minutes. Season the pecans with rosemary and cayenne pepper; continue cooking another 1 to 2 minutes. Remove from heat and drain pecans on a plate lined with paper towels.
- Toss spinach leaves and green onion together in a large mixing bowl; top with mandarin oranges and pecans. Drizzle dressing over the salad to serve.

- Remove the stems from the spinach; wash leaves thoroughly, and pat dry. Tear the spinach into bite-sized pieces.
- Heat the oil in a large Dutch oven or wok over high heat. Add the garlic; and saute 1 minute. Add the spinach; stir until coated with oil.

- Bring a large pot of water to a boil. Add spinach and cook over medium heat until cooked through, about 2 minutes. Drain spinach and set aside to cool.
