Serbian Pljeskavica (Hamburgers) image

Steps:

  • 1. Mix together all ingredients until thoroughly combined. Refrigerate for several hours for flavors to meld and mixture to firm.
  • 2. Heat grill. Using slightly dampened hands, divide meat mixture into 6 portions. Form into thin patties, 9 inches by 1/2 inch or about the size of a small dinner plate.
  • 3. Grill, broil or pan fry pljeskavica about 7 minutes per side. Indoor grills work well, too. Serve with green onions or chopped raw onion, tomatoes, pogacha and Serbian potato salad or cole slaw on the side. Some Serbs place the patty on a large bun like an American hamburger.

1 lb ground beef chuck
1/2 lb ground pork
1/2 lb ground lamb
2 clove garlic, finely chopped
1/2 c finely chopped onions
1 1/2 tsp salt
1 Tbsp parika (sweet or hot, your choice)

CEVAPCICI (CEVAPI) BALKAN SAUSAGE SANDWICHES

Balkan variation of the Arabic kebab found in most southeastern European countries, such as those of the former Yugoslavia, Bulgaria, and Romania. Optional toppings are chopped onions, tomatoes, sour cream, kajmak, ajvar, and cottage cheese.

Cevapcici (Cevapi) Balkan Sausage Sandwiches image

Steps:

  • In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands.
  • Form into finger length sausages about 3/4 inch thick. Arrange in a plate.
  • Cover with plastic wrap or wax paper and refrigerate for one hour to one day, to let the flavors settle and the mixture become firm.
  • Preheat the grill, medium-low heat. Lightly oil the grilling surface.
  • Grill cevapcici until cooked through, turning as needed. The grilling usually takes about 30 minutes.
  • Serve in warmed or grilled pita bread, white bread or rolls on a bed of chopped onions, with your choice of toppings such as kajmak, sour cream, cottage cheese, fresh peppers, ajvar or tomatoes.

" CHIVAPCHICHI" SERBIAN HAMBURGER FINGERS?

Not sure what to call them in English. But in Serbian it's "Chivapchichi". Basically it's like a hamburger but shaped like a sausage link. Great on the grill and the way to eat them is like a Serb.... chop up some onion salt it slightly and enjoy! Greeks make it with lamb but we use a combination of beef, pork and veal. I've listed only beef, but if you can find the trio pack use that.

Steps:

  • Chop your onion and mince your garlic. In large bowl add ground meat, onion and garlic and the rest of the ingredients.
  • Mix well and take about a golf ball size in both hands and roll to form small sausage shaped links; about 2 inches long and 1/2 inch thick.
  • You can either grill them outside or do them in the broiler. Just make sure to spray your grill racks with non-stick spray and once one side is nicely light brown turn over.
  • Once both your sides are lightly browned, you can use your spatula to just move them around without them falling apart. They should be nicely browned not burned.
  • You can serve as a appetizer with some hot sauce or as a main dish (Make sure to just make enough). Serve with a nice tomato, pepper salad and you're good to go.

SARAJEVO CEVAPI (SERBIAN SAUSAGES)

This is a traditional recipe from Bascarsija, the old bazaar in Sarajevo. Cevapi (pronounced CHAE-vap or CHAE-vap-ee) are easy to make. These homemade sausages are found in most Balkans countries. Traditional cevapi (or cevapcici) from Sarajevo are made exclusively from either beef or lamb taken from 3 different part of the animals. Cevapi is considered a national dish of Bosnia and Herzegovina but is also common in Serbia, Croatia, Montenegro, North Macedonia, Kosovo, and Slovenia.

Sarajevo Cevapi (Serbian Sausages) image

Steps:

  • Cut the three different beef types into 1-inch pieces and place into a large bowl. Add salt, garlic powder, and pepper and mix until well combined. Cover and refrigerate for 24 hours.
  • Insert a medium-coarse grinder plate in your meat grinder. Pass meat mixture 2 times through the meat grinder.
  • Shape meat mixture into sausages the size and shape of a fat finger, roughly 3 inches long and 3/4 inch in diameter.
  • Preheat an outdoor charcoal grill for medium-high heat and lightly oil the grate.
  • Grill cevapi until cooked through, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
