I" do not make many desserts that are diabetic friendly but I am going to give this recipe for all of you. May you enjoy.!!!!!!!!!!!

Steps:
- 1. Prepare pudding mix according to package directions, using skim milk. To assemble , divide half of the pudding between 6 parfait glasses or stemed goblets. Using half of the whipped topping, make a thin layer of topping in each glass. Top with a few banana slices. Repeat layers, using remaining pudding, whipped topping and bananas. Sprinkle almonds over each serving. Cover with plastic wrap and refrigerate until ready to use.

CHOCOLATE-AMARETTI PARFAITS
Steps:
- Melt 1 1/2 ounces finely chopped bittersweet chocolate in the microwave; let cool. Mix with 1 1/2 cups mascarpone cheese and 1/3 cup sugar. Layer in glasses with raspberries and crumbled amaretti cookies.

- Heat chocolate chips and 4 tablespoons cream in microwave in 1-cup glass measuring cup at 50 percent power just until chocolate is melted, about 30 to 35 seconds. Stir to blend; cool chocolate sauce to lukewarm. Whisk mascarpone, amaretto, sugar, and remaining 2 tablespoons cream in medium bowl until blended and mixture just starts to thicken.
- Using 2 1/2-inch-diameter cookie cutter, cut out round from each angel food cake slice. Place 1 cake round in each of 4 wine goblets or old-fashioned glasses. Top each cake round with 3 banana slices, 1 heaping tablespoon mascarpone mixture, bittersweet chocolate sauce, and sprinkling of almonds. Repeat parfait layering 1 more time and serve.

ALMOND MILK-BANANA PUDDING PARFAITS
Try this twist on a southern favorite with Almond Milk-Banana Pudding Parfaits. Combine JELL-O Banana Cream Flavor Instant Pudding with almond milk, vanilla wafers, fresh bananas and COOL WHIP to make six servings of these Almond Milk-Banana Pudding Parfaits.

- Beat pudding mix and milk in medium bowl with whisk 2 min.
- Place 4 wafers in each of 6 (12-oz) glasses. Top evenly with 1/2 the pudding, adding about 2 Tbsp. pudding to each glass.
- Reserve 6 banana slices and 12 of the remaining wafers for later use; wrap banana slices tightly and refrigerate until ready to use.
- Layer 1/2 of the remaining banana slices evenly over pudding in glasses; top evenly with 3/4 cup COOL WHIP and 10 of the remaining wafers. Cover with layers of remaining banana slices and 1/2 the remaining COOL WHIP; top with layers of remaining wafers, bananas, pudding and COOL WHIP.
- Refrigerate 1 hr.
- Crush 6 of the reserved wafers coarsely. Garnish each dessert with 1 each banana slice and reserved wafer. Sprinkle with crushed wafers.

- In a small bowl, combine bananas and lemon juice; let stand for 5 minutes. In another bowl, whisk the milk and pudding mix for 2 minutes. Refrigerate for 5 minutes. Stir in sour cream. , Drain bananas. Place half of the banana slices in eight parfait glasses; layer with pudding mixture, whipped topping, chocolate wafer crumbs and remaining banana slices. - In a medium saucepan, stir together the sugar, cornstarch, salt and yolks. Whisk in the milk and bring to simmer, stirring frequently, over medium heat (it will take 5-8 minutes). When the mixture starts to bubble, turn the heat down to low and continue cooking, whisking constantly, for 1-2 minutes until the mixture thickens. Remove the pan from the heat and immediately whisk in the butter, vanilla and rum. Transfer the mixture to a bowl and place a piece of saran wrap directly over the pudding to prevent a film from forming. Chill in the refrigerator until cool, a few hours. (To hurry it up, you can place the bowl in an ice bath and whisk occasionally until cold.)
- Once the pudding is cold, place the heavy cream in a medium mixing bowl. Using an electric mixer, whip on medium-low speed until the whisk or beaters begin to leave tracks in the cream. Add the Confectioners' sugar and whip until the cream holds medium, silky peaks. Go slowly towards the end; if it gets grainy or curdled, you’ve gone too far. Use a rubber spatula to fold the whipped cream into the cold pudding.
- Spoon a large dollop of the pudding mixture into the bottom of each parfait glass. Top with one layer of cookie pieces and one layer of sliced bananas. Repeat once and top with a final layer of pudding. Crumble some of the cookie pieces and sprinkle over top. Refrigerate until ready to serve.
- *Do not slice the bananas until you are ready to assemble the parfaits. Parfaits are best when made 3-4 hours ahead of time.
