BANANA NUGGET COOKIES
Combination of spice cookie, banana bread, oatmeal, and chocolate chip cookies! We always called these Banana Nougat cookies, but I think they're really called nugget cookies. Either way, these are the best. Everyone loves them. They're a great "breakfast cookie".

Steps:
- Cream shortening, sugar and egg.
- Add dry ingredients and mashed banana and mix thoroughly.
- Stir in oats and chocolate chips.
- Drop onto cookie sheet. Bake at 375 about 15 minutes.

- Preheat oven to 350°. In a large bowl, cream butter and 1-1/3 cups sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Stir in chocolate chips., Divide dough into 4 portions. On a lightly floured surface, roll each portion into a 15-in. rope. Place 2 ropes 4 in. apart on a parchment-lined 15x10x1-in. baking pan; flatten each with a fork to 1/4-in. thickness. Mix cinnamon and remaining sugar; sprinkle about 2 teaspoons mixture over each rectangle. Repeat with remaining ropes., Bake 15-17 minutes or until edges are light brown. Cool on pans 2 minutes; immediately cut each rectangle into 1-in. slices. Remove to wire racks to cool.

- Spray a 9x9" baking pan with vegetable spray and line it with parchment paper and up the sides of the pan. Also spray the parchment paper as well. Set aside.
- Place the toasted nuts in a heat-safe bowl and put in a preheated very low oven at 250 degrees until needed.
- Combine the sugar and 1/4 C. of corn syrup with the water in a 2 quart saucepan and set it aside.
- Place the egg whites in the bowl of an electric mixer with the whip attachment. Do not start to mix yet.

- Cream the butter and castor sugar together until pale and fluffy. Add the egg and vanilla and mix to combine.
