CHOCOLATE CINNAMON-WALNUT BROWNIES WITH CHOCOLATE GANACHE
Plan ahead the brownies have to chill for 2 or more hours for the ganache to set properly. Prep time includes making ganache. I also added in a handful (didn't measure!) of mini chocolate chips to the batter along with the nuts, but that is optional. These brownies are wicked!

Steps:
- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Butter and lightly dust with flour, an 8 x 8-inch baking dish (preferably metal).
- For brownies: mix the flour, cinnamon and salt in a small bowl.
- On top of a double boiler with simmering water stir chocolate and butter until melted and smooth.
- Turn off heat and let the chocolate stand over the water.
- Using an elecric mixer, beat eggs, vanilla and sugar in a large bowl until mixture thickens (about 5 minutes).
- Stir in flour mixture in two additions, blending well after each addition.
- Gradually add in warm chocolate into mixture, beating until just combined.
- Stir in walnuts.
- Pour batter into prepared pan, and bake for about 35 minutes (might take more or less time) or until top is set, and a toothpick or cake tester inserted in the middle comes out with moist crumbs on it.
- Cool completely in pan on a rack.
- For ganache: Whisk all ingredients in a small saucepan over medium-low heat until melted and smooth.
- Pour evenly over top of brownies.
- Chill brownies until ganache is set (about 2 hours).
- Store covered in the refrigerator.

- Preheat oven to 350 degrees F.
- Butter and flour a 12 x 18 x 1-inch baking sheet.
- Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
- In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the baking sheet.
- Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.

- Preheat oven to 350. Lightly grease/spray an 8" square baking pan.
- Beat butter and white sugar and vanilla until creamy; add eggs, one at a time beating well after each.
- In a seperate bowl, combine flour, baking powder, salt, and cocoa; stir well. Add this flour mixture into the creamed mixture and beat well.
- Spoon half of this batter into the prepared 8" square pan, spreading evenly.
- In a small bowl, stir together brown sugar, nuts and cinnamon. Sprinkle this mixture evenly over the 1/2 brownie batter in pan.
- Spoon/dallop remaining brownie batter over top; spread evenly.
- Bake at 350 for 45-50 minutes or until toothpick poked in center comes out clean.

- Heat the oven to 350 degrees. Lightly butter a 10-inch oven-safe skillet. Fill a medium pot with about 1 1/2 inches of water, and bring to a simmer. Place a medium bowl over the pot and add the chocolate, butter and oil. Heat, stirring frequently, until the chocolate and butter are melted. (Alternatively, place the chocolate, butter and oil in microwave-safe bowl, and microwave for 30 seconds, then stir. Continue to microwave in 15-second bursts, stirring after each, until the butter and chocolate are melted.) Remove the bowl from the heat and whisk in the light brown sugar and granulated sugar. (The mixture will be grainy.)
- In a medium bowl, whisk together flour, baking powder and salt and set aside. To the chocolate mixture, add the eggs one at a time, mixing well after each addition. Whisk in the vanilla extract. Add the flour mixture and mix until just incorporated. Pour the batter into the prepared skillet and spread into an even layer using a spatula.
- Bake the brownie until the surface appears set: A toothpick inserted into the center should come out with a few moist crumbs attached, 30 to 33 minutes. Let cool completely.
- While the brownie cools, make the ganache: Place the chocolate in a medium, heat-safe bowl. Bring the cream to a simmer in a small pot over medium heat. Pour the hot cream over the chocolate and let it stand undisturbed for 15 seconds. Stir the ganache until the chocolate is melted and the mixture is smooth. Let cool slightly.
- Once the brownie is cool, spread the ganache onto the brownie in an even layer. (It will have thickened slightly. If it's not thick enough, you can refrigerate it for 10 minutes or so; if it thickens too much, you can microwave it in 10-second bursts in a microwave-safe bowl until it's spreadable again.) Sprinkle with flaky sea salt.
