This is my spin on having chocolate for breakfast! It's a cross between a pancake and a brownie. I hope you like them as much as my family does. Serve warm with your favorite pancake syrup, whipped cream, and berries of your choice. Enjoy!

Steps:
- Put the chocolate in a heatproof bowl with the butter and golden syrup and gently melt in 10-second bursts in the microwave, or melt it over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the rice pops, coating them gently with the chocolate until they are all completely covered.
- Divide the mixture between nine cupcake or 12 fairy cake paper cases - it's easier if you slide these into a muffin tin as it will help them hold their shape. Leave to set. If you want them to set faster, put in the fridge for 1 hr.
- Drizzle with a little melted chocolate and decorate with sweets, dried fruit or nuts while they are still wet enough to stick them on. Will keep in an airtight container for five days.

CHOCOLATE CHIP PANCAKES
There's a rush to breakfast in my house when I whip up this chocolate chip pancake recipe. The batter calls for chocolate milk and mini chips, and I top the golden brown cakes with butter and fruit. My daughter says the chocolate chip pancakes are one of her all-time favorites. -Laura Rader, Fergus Falls, Minnesota

- In a large mixing bowl, whisk together dry ingredients (flour, baking powder, baking soda and salt).
- In a measuring cup, combine half and half and apple cider vinegar. Stir few times and let sit 2 to 3 minutes. It should thicken up and half and half should sour.
- Add egg, oil and vanilla to medium bowl or large measuring cup. Whisk until smooth. Add half and half and vinegar mixture. Whisk to combine. Add the wet ingredients and chocolate chips to dry ingredients and stir to combine. Do not overmix. The batter should be slightly lumpy. After few minutes (while the griddle pan heats up), the batter will thicken and have bubbles.
- Using an ice cream scoop, scoop the batter (1 scoop per pancake) and fry on one side until bubbles form holes around the edges and towards the center. Flip pancakes and fry on the other side for 10 to 15 seconds. I always melt 1 tablespoon of butter on the griddle while it heats up.
