- In a small saucepan, combine milk and butter. Cook and stir over low heat until butter is melted. Place the confectioners' sugar in a large bowl; add milk mixture and beat until smooth. Stir in the walnuts, maple flavoring and vanilla. Roll into 3/4-in. balls; place on waxed paper-lined baking sheets. Refrigerate until firm, about 1 hour., In a microwave, melt the chips, bittersweet chocolate and shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container.

- Line a baking sheet with parchment or a silicon baking mat.
- Cut the apples lengthwise (stem to bottom) into 4 thick slices each. Remove any visible seeds and keep the core intact. The end slices will be rounded; cut a thin slice off so they lay flat. Poke a small hole in the bottom of each slice with a wooden ice-pop stick and push halfway into the apple.
- Combine the bittersweet chocolate and 1 teaspoon of the coconut oil in a medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth. Add the white chocolate and remaining 1 teaspoon coconut oil to another medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth.
- Dip half of the apple slices completely in the bittersweet chocolate, letting the excess drip back into the bowl, and place on the prepared baking sheet. Dip the remaining apple slices in the white chocolate. Let sit at room temperature so the chocolate thickens a bit, 10 to 15 minutes.
- Transfer the leftover dark and white chocolate to 2 separate small resealable plastic bags and snip a small corner off each bag. Pipe 3 to 4 dark chocolate concentric circles on the white chocolate-dipped apples and visa-versa. Drag a toothpick through the circles, starting the center and working your way out to create a spider web design. Refrigerate until hardened, 15 to 20 minutes.

- In large bowl, beat brown sugar, butter and maple extract with electric mixer on medium speed until blended, or mix with spoon. Stir in flour, baking powder and salt. Stir in 1 cup pecans. Shape into roll, 12 inches long. Wrap and refrigerate about 2 hours or until firm.
- Heat oven to 375°F. Cut roll into 1/4-inch slices. On ungreased cookie sheet, place 2 inches apart. Bake 8 to 10 minutes or until edges are golden brown. Remove from cookie sheet to cooling rack; cool completely.
- In 1-quart saucepan, heat chocolate chips and shortening over low heat, stirring constantly, until melted and smooth; remove from heat. Dip half of each cookie into glaze. Sprinkle with additional pecans. Place on waxed paper until glaze is set.

- In a large bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to the creamed mixture. Stir in almonds and chocolate chips. Cover and refrigerate for 2 hours. Divide dough in half. Shape into two 8-in. rolls; wrap each in plastic wrap. Refrigerate for 3 hours or until firm., Unwrap and cut into 1/4-in. slices. - Wash apples and dry thoroughly. Slice into thin-ish (1/4") slices and remove any seeds/stem. Insert popsicle sticks through the bottom. If the slices are too thin, the slice may break in half, so do one or two test trials before slicing all of your apples.
- Add chopped chocolate (or chocolate chips) to a heat-safe bowl. Microwave in 30 second intervals, stirring well between each interval, until completely melted. Optional: add 1 tbsp coconut oil to thin it out (makes it easier to dip).
- Dip each apple slice in chocolate, using a spoon to coat the entire slice. Let excess chocolate drip off, then transfer to a parchment paper-lined tray.

- Slice apples into 1/2" pieces. (It's really important to have a good quality chef's knife. I love Wusthof.) With a knife make a little slit in the bottom of each apple slice to make it easier to insert a popsicle stick. Insert a popsicle stick into each piece of apple. Set aside.
- In a medium bowl, melt chocolate chips in the microwave on high for about 2 minutes (in 30 second intervals, don't overheat because the chocolate will burn).* Stir in coconut oil until smooth. (If the apples are extra juicy, pat down with a paper towel before dipping.) Dip apple slices in chocolate and place on parchment lined cookie sheet. (I used a 13"x18" half sheet pan.)
