COCONUT-MACAROON NESTS

Press this macaroon mixture into mini muffin tins to create bite-size baskets for your favorite Easter candies. For a chocolate version, fill each basket two-thirds full with melted chocolate (we used three ounces total) and let them set before adding candies.

Coconut-Macaroon Nests image

Steps:

  • Preheat oven to 300 degrees. Coat mini muffin tins with cooking spray.
  • In a bowl, stir together whites and salt with a fork; mix in coconut. Drop 2 tablespoons of mixture into each prepared tin.
  • Lightly press mixture into bottom and up sides of each cup. Bake until light golden on top, 28 to 30 minutes.
  • Let cool in tins on a wire rack 10 minutes, then run a thin metal spatula around sides to loosen. Lift out of cups; let cool completely.

Vegetable-oil cooking spray
4 large egg whites
1/2 teaspoon coarse salt
1 package (14 ounces) sweetened flaked coconut

Chocolate Birds' Nests image

Steps:

  • Melt 8 ounces chopped semisweet chocolate in a heatproof bowl set over a saucepan of simmering water, stirring. Remove the bowl from the pan and stir in 2 cups canned potato sticks. Coat a 6-cup muffin pan with cooking spray and scoop some of the chocolate mixture into the cups; make an indentation in each to form nests. Chill until set, at least 3 hours. Fill with marcona almonds.

  • Beat butter, sugar, water and vanilla in medium bowl until well blended. Add egg; beat well. Stir together flour, salt and baking soda. Gradually beat into butter mixture, beating well. Divide dough in half. Add several drops green food color to one half dough, blending until desired color is achieved. Refrigerate doughs about 30 minutes or until firm enough to handle.
  • Heat oven to 350°F. Shape dough into 30 balls (about 1 inch). Roll green cookie balls in green tinted coconut and the remaining balls in the remaining untinted coconut; place in prepared muffin cups.
  • Bake 12 to 14 minutes or until cookie surface is set. Cookies will appear soft and moist. Do not over bake. Let cookies cool about 3 minutes; with end of buttered wooden spoon press indentation into surface of each cookie. Let cookies cool completely in pans on wire rack.
