My family loves this peanut butter cookie bars recipe-oatmeal, brownie bars, peanuts-it's made from all our favorite things! Oatmeal, peanut butter and chocolate chips make these bars a big hit with kids of all ages. - In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well. Spread into a greased 13x9-in. baking pan. Sprinkle with chocolate chips. , Bake at 350° for 20-25 minutes or until lightly browned. Cool on a wire rack for 10 minutes. , Combine icing ingredients; drizzle over the top. Cool completely. Cut into bars.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat butter, 1/2 cup white sugar, brown sugar, and egg in a large bowl until smooth. Stir in flour, oats, 1/3 cup peanut butter, baking soda, vanilla extract, and salt until dough is well mixed. Press dough into prepared baking dish.
- Bake in preheated oven until golden brown, about 20 minutes; sprinkle with chocolate chips immediately. Let chocolate chips melt, about 5 minutes. Spread chocolate over cookie with a spatula or knife.
- Mix confectioners' sugar, 1/4 cup peanut butter, and milk in a small bowl until smooth. Add more milk if mixture is too thick to pour; drizzle over chocolate and allow to cool. Cut into bars to serve.

NO-BAKE CHOCOLATE AND PEANUT BUTTER OATMEAL BARS

- Coat a 9-by-13-inch baking dish with cooking spray. Line with parchment, leaving a 2-inch overhang on the 2 long sides.
- Combine wafers, oats, sugar, and salt in a large bowl. Melt butter in a medium saucepan over medium heat, then add chunky peanut butter and 3/4 cup smooth peanut butter, whisking until well combined. Add peanut butter mixture to wafer mixture, stirring until combined. Transfer to baking dish, and use the bottom of a measuring cup or an offset spatula to firmly press mixture into an even layer. Refrigerate for 30 minutes.
- Pour melted semisweet chocolate over chilled mixture and, using an offset spatula, spread into a thin layer that covers the entire surface. Refrigerate until hardened, at least 15 minutes.
- Heat remaining 3 tablespoons smooth peanut butter in a small saucepan until runny. Drizzle peanut butter over chilled chocolate. Drizzle melted milk chocolate over peanut butter. Refrigerate until hardened, about 15 minutes.
- Use parchment to lift out chilled block of bars. Run a sharp knife under hot water, dry well, and cut into 24 squares, wiping knife between cuts. Let bars stand at room temperature for 10 minutes before serving.

- preheat oven to 350 degrees.
- Mix all ingredients together, adding water slowly until you can get it all mixed, but not too wet.
- Push mixture into a 9x13 baking pan.
- Bake approximately 8-10 minutes, or until mostly dry.
- Let cool, and store in refrigerator. Cut into however many servings you like, based on size.
DELICIOUS CHEWY PEANUT BUTTER CHOCOLATE CHIP OATMEAL BARS
These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking dish.
- In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
- Add in the peanut butter and beat until combined.
- Add in eggs and beat until combined.
- In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
- Mix in chocolate chips.
- Transfer and spread into prepared baking dish.
- Bake for 22-25 minutes or until JUST set (do not overbake).
- Cool then cut into squares.

Hands down my favorite bar recipe. My mom makes these for all of our family parties and everyone goes nuts! They are so addicting, I think I am going to make some now :)

- Cream butter, brown sugar and white sugar until light and fluffy.
- Add egg, 1/3 c peanut butter, soda, salt, vanilla and mix well; add flour and oats.
- Spread in a greased 9x13 pan, bake @ 350 for 18-21 minutes, or until golden brown.
- When bars are done immediately sprinkle choc chips on top, let stand a few minutes until melted.
- Spread evenly, set aside to cool completely.
- In a mixing bowl combine all frosting ingredients, mix until smooth, it should be creamy not runny, add milk if needed.
- Spread evenly over cooled chocolate.
- Enjoy!

CHOCOLATE PEANUT BUTTER OATMEAL
It's like having unbaked cookies for breakfast, without the butter and extra sugar. When I haven't had chocolate chips, I've used other chocolate. (Dove Promises are really good. I've also used Godiva cocoa.) I recommend using a large microwaveable dish (I use a 4-cup Pyrex); I discovered the hard way what a mess this can be in too small a bowl. And I always just eyeball the ingredients (except the oatmeal), so feel free to play with the measurements. It's not low fat, but it's soooo good.
