CHOCOLATE PECAN DREAMS

This recipe began as the base for a peanut butter chocolate thumbprint. I liked it so much, though, I decided to turn it into its own cookie recipe. -Becky Tarzlaff, Newton, Kansas

Chocolate Pecan Dreams image

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg yolks, milk and vanilla. Combine the flour, cocoa and salt; gradually add to the creamed mixture and mix well. Stir in chocolate chips. , Roll into 1-1/2-in. balls. Beat egg whites until foamy. Dip each ball halfway into egg whites, then in pecans. Place pecan side up 2 in. apart on greased baking sheets. Flatten slightly with a glass dipped in sugar. , Bake at 350° for 12-14 minutes or until firm. Carefully remove to wire racks to cool.

Chocolate Covered Pecans image

Steps:

  • Combine the chocolate chips and cream in a medium metal bowl, and set on top of a pan of simmering water. Stir occasionally until melted and smooth. Remove from heat. Stir pecan halves into the chocolate until completely coated.
  • Remove a few pecans at a time with a slotted spoon. Separate pecan halves and place onto a waxed paper lined cookie sheet. Refrigerate for 10 minutes to set.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cut the butter into the flour with a pastry blender or two knives, until mixture resembles coarse meal. Stir in pecans, press into bottom of a 9x13-inch baking dish and bake 15 minutes, or until golden. Cool completely.
  • In a medium bowl, combine cream cheese, confectioners' sugar and 1 cup whipped topping with electric mixer until smooth. In a separate bowl, whisk together chocolate pudding mix, vanilla pudding mix and milk until there are no lumps. Combine cream cheese mixture and milk mixture and stir until smooth. Pour onto cooled crust. Spread remaining 2 cups of whipped topping on top of pudding mixture. Sprinkle 2 tablespoons of chopped nuts over all. Chill in refrigerator until serving.

  • Preheat oven to 350 degrees F.
  • Lightly grease a 9-inch square pan.
  • Stir together confectioners' sugar and flour in a bowl.

Pecan Dreams image

Steps:

  • Preheat oven to 300 degrees Fahrenheit.
  • Combine butter, powdered sugar, vanilla, flour, pecans and water. You might have to add a little extra water if mixture is too dry.
  • After all ingredients are mixed, roll into small balls.
  • Place balls on an ungreased cookie sheet.
  • Bake for 30 to 45 minutes.
  • After cookies come out of oven, cover with powdered sugar; set aside.
  • Cool completely.
  • When cooled dust them with more powdered sugar.

  • Sift cake flour, salt, and baking powder into a medium bowl.

  • Add the butter and sugar to the bowl of a stand mixer or use a hand mixer. Mix on medium speed until combined, then mix on high speed until very light and creamy, about one minute. Add the vanilla and mix to incorporate. Add the flour and pecans and mix just until flour is incorporated.
  • Using a small cookie scoop, place a scoop of cookie dough in your hand and roll it into a ball and place the ball on an ungreased large cookie sheet. Repeat until all of the dough is rolled into balls. Bake for 30 minutes or until the cookies are just lightly browned on the bottoms and remove from oven.
  • Allow cookies to cool for 2 to 3 minutes, then roll the cookies, one at a time, in the powdered sugar and transfer to a piece of waxed paper. Once cookies have completely cooled, re-roll the cookies one more time in the powdered sugar. You might have to use a little bit more powdered sugar.
  • Store cookies in an airtight container. These cookies will stay fresh for several days and they are an excellent cookie for making ahead and freezing.
