- Whip cream and vanilla together until soft peaks form. Fold whipped cream into vanilla pudding mixture.

- In a small bowl, dissolve gelatin in boiling water. Refrigerate until partially set, about 1-1/2 hours. In a bowl, combine wafer crumbs and butter; press into a 13-in. x 9-in. dish. Set aside., Beat gelatin with an electric mixer until foamy. Add the lime and lemon juices. Gradually add sugar, beating until dissolved. While beating, slowly add the milk; mix well. Pour over prepared crust. Refrigerate until set. Garnish with Pots o' Gold if desired.

- Preheat oven to 325 degrees F.
- Spray a 9-inch pie dish with nonstick cooking spray.
- In a medium bowl, beat egg whites and salt at high speed with an electric mixer until foamy.
- Gradually add sugar, beating until stiff peaks form.
- Gently fold in chocolate wafer crumbs, pecans and vanilla.

- In a medium microwave-safe bowl, microwave 1 1/4 cups cream until hot, about 3 minutes. Add chocolate and let stand until melted, 5 to 10 minutes. Whisk to combine, then whisk in rum. Pour 1 1/2 cups chocolate mixture into crust (reserve remaining chocolate mixture). Sprinkle nuts over top. Refrigerate pie 3 hours (or up to 2 days).

- Spray a 9-inch glass pie plate with non-stick cooking spray.
- In a small saucepan stir together butter and 1 ounce chocolate until melted and combined.
- Finely grind the chocolate wafer crumbs in a processor.
