CHORIZO AND CHEESE BISCUITS

Hot out of my oven! I made these with dinner tonight.This recipe is so simple anyone can make it. The biscuits are light and fluffy...and did I mention spicy? You won't be let down, I promise. Enjoy!

Chorizo and Cheese Biscuits image

Steps:

  • 1. Preheat oven to 400 degrees. Mix all ingredients in a bowl together. Spray a non stick to your baking sheet or foil because they will stick. Spoon on biscuit mix and cook for 10 minutes. Cool and serve.

2 1/4 cup bisquick
2/3 cup milk
1 cup crumbled cooked chorizo
1 cup shredded cheddar cheese

Baked Cheese with Chorizo image

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onion and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put 1/2 of cheese in the baking dish and sprinkle with 1/2 of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

Vegetable oil, for oiling the baking dish
6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large garlic clove, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas, warmed

Bake a batch of these moreish manchego and chorizo biscuits to serve as part of a cheeseboard. They make a lovely edible gift at Christmas, too

Manchego & chorizo melting biscuits image

Steps:

  • Put the flour, paprika and fennel seeds in a food processor and blitz with the butter until it resembles fine breadcrumbs. Add the manchego and chopped chorizo and blitz again until a dough forms. Roll into a 4cm log and wrap in baking parchment. Chill in the freezer for 30-40 mins until firm.
  • Heat the oven to 180C/160C fan/gas 4. Unwrap the dough and slice into 5mm-thick biscuits. Lay on a lined baking sheet well spaced apart (they will spread in the oven). Bake for 15-20 mins until golden. Leave to cool. Will keep in an airtight container for three days.

  • In a bowl mix the ground pork, red wine vinegar, Smoked paprika, ancho chili powder, Mexican oregano, onion powder, garlic powder, cumin, kosher salt thoroughly to incorporate and distribute the seasoning throughout for meat. Cover and refrigerate for at least 1 hour or overnight.
  • Preheat the oven to 425°F with rack in upper third of oven. Line baking sheets with parchment paper or silicone mat, set aside.
  • Shred the cheese and add to food processor with flour and chipotle powder. Process until cheese is finely chopped and incorporated into the flour. Add the cream and pulse until dough ball forms.
  • Scrape the dough from food processor bowl and turn out onto floured work surface. Lightly roll out to 3/4" thickness and cut out 16 2-inch round biscuits. Distribute biscuit rounds on baking sheets. Brush the tops with milk and bake for 15 minutes, or until golden brown.
