POTATO AND CHORIZO ENCHILADAS

Potato and Chorizo Enchiladas image

Steps:

  • For the enchilada sauce: Heat the canola oil in a medium saucepot over medium heat. Add the onion and saute until softened, 5 to 6 minutes. Add the garlic and cook another 2 minutes. Transfer the onions and garlic to a blender. Add the stock, chili powder, salt, pepper and tomato paste and blend on high until smooth, about 30 seconds.
  • For the enchiladas: Heat a large skillet over medium heat. Add the chorizo and cook, breaking it up into small pieces with a wooden spoon, until cooked through, 6 to 8 minutes. Drain off the rendered fat. Let cool.
  • Preheat the oven to 375 degrees F.
  • Heat the canola oil in a small skillet over medium heat. Fry each tortilla until lightly crisp but still pliable, 10 to 15 seconds. Drain on a baking sheet lined with paper towels.
  • In a large bowl, toss together the chorizo, home fries or potatoes and 1 cup of the cheese.
  • Ladle about 3/4 cup of the enchilada sauce into the bottom of a 9-by-13-inch baking dish. Place about 1/4 cup of the chorizo mixture in the center of each tortilla and roll up. Arrange the filled tortillas in the baking dish seam-side down in a single row from end to end. Pour the remaining enchilada sauce over the top. Top with the remaining 1 cup cheese. Bake until the cheese is melted and bubbly, 15 to 20 minutes.
  • While the enchiladas cook, combine the sour cream, hot sauce and lime juice in a small bowl.
  • Drizzle the enchiladas with the sour cream mixture and garnish with the cilantro.

2 cups chicken stock
2 tablespoons chili powder
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
One 6-ounce can tomato paste
8 ounces fresh Mexican chorizo
1/2 cup canola oil
8 corn tortillas
3/4 cup frozen home fries or refrigerated diced potatoes
2 cups shredded Mexican blend cheese
1/4 cup sour cream
2 teaspoons hot sauce
Juice of 1/2 lime
2 tablespoons chopped fresh cilantro

SWEET POTATO ENCHILADAS

A twist on the traditional, using sweet potatoes. Easy and filling and liked even by those that don't normally eat sweet potatoes. The flavor will surprise you! Garnish with sour cream and salsa if you like.

Sweet Potato Enchiladas image

Steps:

  • Bring a large pot of water to a boil over medium heat, and boil the sweet potatoes until tender, about 30 minutes. Cool and peel the sweet potatoes.
  • Place the sweet potatoes in a bowl, and mash them with the cream cheese, green onions, chili powder, cumin, oregano, salt, and pepper until well mixed.
  • Preheat oven to 350 degrees F (175 degrees C), and grease a 13x9 inch baking dish.
  • Heat the oil in a skillet over medium-low heat, and fry the tortillas, one at a time, for about 30 seconds per side. Remove the tortillas with tongs, and drain on paper towels.
  • Place about 1/3 cup of sweet potato filling down the center of each tortilla, roll it up, and place filled tortillas seam side down in the prepared baking dish. Pour enchilada sauce over the tortillas, and sprinkle with Monterey Jack cheese.
  • Bake in the preheated oven for 20 to 30 minutes, until the enchiladas are bubbling and the cheese is beginning to brown.

Steps:

  • Peel the sweet potato and cut into a half inch cubes. Remove the stem and seeds from the poblano and also dice into half inch pieces. Mince the garlic.
  • In a large skillet, cook the sweet potato, poblano and garlic in vegetable oil, over medium heat until they begin to soften (about 10 minutes). Squeeze the chorizo out of it's casing into the skillet. Break up the meat and cook until thoroughly browned (about 5 minutes).
  • Spray a large casserole dish with non-stick spray and preheat the oven to 375 degrees. Scoop about ¾ cup of the chorizo sweet potato filling into each tortilla. Fold in the ends and then roll the tortilla up around the filling. Place the filled and rolled tortillas in the baking dish. They should fill the dish and fit tightly against each other to prevent unrolling.
  • Pour the enchilada sauce over the the rolled tortillas and top with shredded cheese. Bake in the oven until the edges begin to bubble (about 20 minutes). Serve hot.

  • Preheat oven to 400 degrees F. Line a baking sheet with foil and piece potatoes several times with a fork. Bake 45-60 minutes, or until fork tender.
  • While potatoes are baking, heat a drizzle of olive oil in a large skillet over MED-HIGH heat. Remove casings from chorizo links and add to the hot skillet. Use a potato masher or wooden spatula to break up chorizo into crumbles and brown.
  • Drain most of the chorizo fat and remove cooked chorizo to a mixing bowl. Add diced onion to the skillet and saute for 3-5 minutes, until soft and charred a bit on the edges. Reduce heat to MED-LOW, add garlic and cook 30 seconds to 1 minute. Transfer onions and garlic to the mixing bowl with the chorizo.
  • Add drained and rinsed black beans and thawed corn kernels to the mixing bowl and toss gently to combine.
