RHODE ISLAND RED CLAM CHOWDER
How can a New Englander love Manhattan over New England clam chowder? Because I like to taste the clams, not just heavy cream with lumps. I came up with this recipe today using what I had on hand, but feel free to improvise. This tastes just like the chowder you get at the beach with clam cakes! When reheating, do not boil or it will 'rubberize' the clams.

Steps:
- Pour clam juice, and the juice from the canned clams into a large pot. Bring to a boil. Add onion, carrots, and potatoes; and simmer over medium heat for 15 minutes, or until tender. Stir in the tomato soup and tomato sauce, and season with parsley and black pepper. Add clams last, and cook just until heated through.

Clam cakes are a summer tradition in Rhode Island. A ride to the shore will always necessitate a stop at George's or Aunt Carries for a dozen clam cakes and a pint of chowder!

- 1. Mix all ingredients together;.
- 2. Drop by ice cream scoop full in hot oil (325 degrees) and fry until golden brown.
- 3. Drain on paper towels.
- 4. Salt as desired and serve hot.
CLAMCAKES
Steps:
- Mix the flour, baking powder, salt, and white pepper in large bowl. Add the remaining ingredients and mix until well blended.
- In a pot fitted with a oil thermometer, heat the canola oil to 350 degrees. Using a 1/2 cup measure, scoop some clamcake mixture and carefully drop clamcakes into the hot oil. Deep fry in canola oil until golden brown.
CHOUDER $ CLAMCAKES
Steps:
- 1. Open quahogs and reserve liquid. 2. Grind quahogs with course blade. 3. Peel potatoes and cut to uniform size (1/2" square) 4. Cover potatoes with water (Just barely) 5. Bring to a boil and cook ten minutes. 6. Dice salt pork or cut in 1/4 " strips. 7. Fry salt pork in large frying pan until golden brown or crisp. 8. Slice onions thinly and fry in pork fat until translucent over low or medium heat. 9. Put onions and salt pork with boiling potatoes and boil an additional five minutes. 10. Mix quahogs and liquid with potatoes and boil an additional 5 min. or until soft but not mushy. 11. Add salt and pepper and if possible let sit overnight. 12. Heat before serving at lowest possible heat but do not boil. If necessary additional water may be added during preparation to insure adequate broth CLAM CAKES 8 Cups Flour 16 Tsp. Baking Powder (5 Tablespoons. Plus 1 teaspoon) 2 Tsp. Salt 1 Tsp. Pepper 4 Eggs Clam Broth 20 Chowder Quahogs
ROCKY POINT CLAM CHOWDER
This is a tradition in Rhode Island! When I was growing up there was an amusement park on the shore called "Rocky Point". It had a huge Shore Dinner Hall that served a meal of lobster, chowder, clamcakes, sweet corn and watermelon. This is the original recipe for the red chowder. It makes 20-8 ounce servings so you may want to cut the recipe in half. Serve with my clam cake recipe. Close your eyes, take a bite and you are in Rhode Island!

Steps:
- In a large stockpot, heat the salt pork until fat melts.
- Add chopped onions; Cook over gentle heat until very soft.
- Add clam juice, potatoes, seasonings, tomato puree, and alittle water; simmer until the potatoes are soft.
- Add quahogs/clams.
- Heat and taste for seasoning.
- TIP: It is best to use old, not new, potatoes because they thicken the chowder with their starch.
- This is not a thick chowder, but can be thickened by crushing Pilot crackers and adding to the chowder near the end of cooking.

ROCKY POINT AMUSEMENT PARK'S CLAM CAKES RECIPE - (3.1/5)

- Mix corn meal, flour and baking powder. Beat eggs separately and add milk to it. Combine milk, eggs and quahogs to dry ingredients and stir, adding enough quahog juice to make a smooth, thick batter. Fry the batter by a gravy-sized spoonful in deep fat at 360 degrees until well browned. Drain on a brown paper bag or paper towel. Serve hot with the hot Rocky Point Clam Chowder (see recipe). This recipe yields 10 to 12 servings.
CREAMY CANADIAN CLAM CHOWDER
I enjoyed this wonderful chowder in Victoria BC and tried to reproduce it @ home.Wonderful! A tasty trick:Puré 1/2 can of the clams; it really adds to the taste.

Steps:
- Pan-fry bacon in a medium heavy skillet over moderate heat until crisp. Drain and crumble bacon; set aside.
- Add onion and celery to pan and sauté over moderate heat until tender but not brown. In a large heavy saucepan, combine onions, celery, drained potatoes, chicken bouillon, clam juice and enough water to cover potatoes.
- Cook, partially covered, over moderate heat for about 10 to 15 minutes or until vegetables are crisp tender.
- Stir in 2 cups milk; simmer another 5 minutes and add seasonings to taste.
- Reduce heat; add clams until they are heated through.
- Combine the rest of the milk and flour, blending until smooth; stir mixture into chowder.
- Heat chowder over low to moderate heat, stirring constantly, until chowder is bubbly hot and slightly thickened.
- Add cooked bacon.
- Adjust seasoning to taste.
- If possible refrigerate chowder, covered, for 24 hours to develop flavors.
