CHRISTMAS SIMMERING POTPOURRI
Simple and great smelling. I like to mix the dry ingredients up in little ziplocks to have them ready to add to water during the holiday season.

- Mix all ingredients in medium saucepan.
- Simmer on low heat.
- Add more water as needed.
CHRISTMAS POTPOURRI
This has been great fun gathering all the stuff, now I am patiently waiting "a few weeks", it should be ready for Christmas. I will place it in among the plants inside our front door entrance, hoping the scent will welcome visitors. Comes out of our local tourism magazine "Okanagan life".

Steps:
- Combine the juniper, rosebuds, bay leaves, cinnamon chips, cloves and cones in a big ceramic bowl.
- In a separate dish, mix the oils with the orrisroot.
- Stir this mixture into the first and put into a closed container to mellow for a few weeks, stirring occasionally.
- Place potpourri in a dish and scatter the roses and cinnamon stick on top.

- Place cloves, allspice, cardamom, star anise, ginger, orange peel and cinnamon sticks on a double thickness of cheesecloth. Bring up corners of cloth; tie with a string to form a bag. Set aside. Fill Dutch oven or large stockpot two-thirds way full with water. Add spice bag. Bring to a boil; reduce heat and simmer, replenishing water as necessary.
