ITALIAN SAUSAGE, PEPPERS, AND ONIONS

My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

Italian Sausage, Peppers, and Onions image

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced

¼ cup white wine

I've been making this dish for years & finally got around to posting! I prefer Tomato Basil Sausages from our local butcher but I've also used Italian (hot or sweet) and Octoberfest sausages. Just don't use those skinny little breakfast links. The "sauce" is delicious with plain steamed rice!

Steps:

  • Prick sausages in several spots& simmer in a skillet of boiling salted water for 10 minutes; drain& slice lengthwise in half.
  • Heat olive oil in skillet, brown sausages& finish cooking (about 5 minutes), remove from skillet& keep warm.
  • Add onions, peppers& garlic to skillet; cook, stirring occasionally, for about 10 minutes.
  • Stir in tomatoes& cook, stirring occasionally, for another 5 minutes or until veggies are cooked to your liking.
  • Stir in tomato sauce, return sausages to skillet, season to taste& cook for an additional 5 minutes.

2 lbs sausages
2 tablespoons olive oil
2 medium onions, coarsely chopped
2 red peppers, cut into strips
2 green peppers, cut into strips
2 garlic cloves, minced
2 medium tomatoes, quartered
1/2 cup tomato sauce
salt and pepper

  • Heat the oil in a large cast iron skillet over medium heat. When the oil is hot, add the sausage links and brown them slowly. Cover the pan loosely with a piece of aluminum foil to help keep heat in and keep the splatter down.
  • Melt the butter in the skillet. Add the sliced peppers and onions. Season them with salt and pepper to taste.
  • Add Marsala or dry red wine to deglaze the pan. Use a wooden spoon to scrape the brown bits on the bottom of the skillet. Season again with salt and pepper, if needed.
  • Add back the sausage links, add the marinara sauce and simmer ingredients over low heat. Simmer until the peppers are soft and sausage links are cooked all the way through.
