CINNAMON APPLESAUCE
A snack doesn't need to be heavy to be satisfying. This nonfat, high-fiber applesauce, made in the microwave, fits the bill. If you prefer a sweeter applesauce, choose red apples, such as Fuji or Gala, instead of adding more sugar.

- In a medium saucepan, combine apples, lemon juice, cinnamon, and salt. Bring to a boil over medium heat. Cover, and cook, stirring occasionally, until the apples have cooked down into a sauce, 20 to 25 minutes.
- Using a fork, remove pieces of apple peel from sauce, and discard. Use immediately, or store, refrigerated, in an airtight container for up to 1 week.

- Preheat oven to 350°. In a large bowl, combine the flours, sugar, 1 teaspoon cinnamon, baking soda, salt, baking powder and nutmeg. In a small bowl, whisk the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. , Transfer to a greased 9x5-in. loaf pan. Combine brown sugar and remaining 1/2 teaspoon cinnamon; sprinkle over the top. , Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. - Mix applesauce and cinnamon together until it is thick enough to hold a form when cut into cookie cutter shapes. Flatten the mixture on a flat surface and cut into cookie cutter shapes.
- Place cookie shapes on a cookie sheet to dry for 3 to 4 days depending on the size and thickness of the cookies. If using as a hanging ornament, make hole with toothpick before drying.

- In a large bowl, combine the applesauce and spices; mix well until a stiff dough forms, adding additional cinnamon if needed., On a board dusted with additional cinnamon, roll out each portion of dough to 1/4-inch thickness. Cut into shapes using 1-1/2-in. cookie cutters dipped in cinnamon. Reroll scraps. CINNAMON-MAPLE APPLESAUCE
Applesauce isn't just for babies. Sure, this very basic version is perfect for tender palates, but it also works as the base for many a sweet treat. In the fall you might try swapping in 1 1/2 pounds of pears for half of the apples and a bit of caramel in place of the maple. (Omit the maple syrup if serving with savory foods.) - In a large heavy-bottomed pot, combine apples, lemon juice, 1/2 cup water, maple syrup and cinnamon, cover, and cook over medium heat, stirring often, until the apples have softened, around 15 minutes. Remove lid and cook for another 5 minutes, until any excess liquid cooks off.
- For a chunky sauce, use a potato masher to carefully mash the apples. For a smooth sauce, transfer the mixture to a food processor and pulse to your desired consistency. If you like a thinner sauce, add up to 1/2 cup of water.
- Taste and add a bit more maple syrup as necessary. (It will depend on the combination of apples.) Stir in a pinch of kosher salt.

- Peel/slice/core apples. I use my peeler/slicer/corer device. Put apples in bowl, sprinkle lemon juice and fruit fresh.
- Repeat process, till apples are finished peeled and cut up.
- Place some in blender, alittle of the water, some of the cinnamon imperial candies and 2 tbs lemon juice.
- Blend at one of the higher speeds, till blended.
- Pour in crock pot or dutch oven.
- Note: I make several different batches at once. One in the dutch oven on medium-high heat and the other in the crock pot. Cook till hot.
- Repeat process till apples, water, cinnamon candies have been blended.
- Pour in crock pot or dutch oven, add 1 cup sugar.
- Meanwhile while applesauce is cooking, wash canning jars, lids, and bands. Sterilize in hot water.
- Take out a few jars at a time, pour in applesauce, put lids and bands on. Put in hot water bath for 25 minutes.
CINNAMON APPLESAUCE
I have been making this sauce for over 10 years and it is thoroughly enjoyed by all and especially most children. I am not certain where this recipe originated, but I have experimented with it and came up with this tasty sauce.

- In a small saucepan, add 1 cup water and cinnamon candies; bring to boil, reduce heat and simmer for about 5 to 6 minutes or until candies are dissolved.
- In a large saucepan or cooking pot, add apples and the dissolved candy mixture along with the additional 1/2 cup of water.
- Cook until apples are soft; mash apples.
- Now add 1 cup sugar, hot-tamale jelly beans and continue to simmer until most of the tamale beans are dissolved, about 10 minutes.
- Some of the jelly beans will not be dissolved and this is okay, they will be light in color.
- Serve hot or refrigerate until ready to serve.
- Serve with ice cream, whipping cream or whipped cream or serve as is.
- The apple sauce has a vary light touch of a cinnamon"spicy" taste.
- You may adjust to your taste by adding more cinnamon candies or using less.
- If you desire to have the sauce spicier, just add a few more cinnamon candies and a small amount of water to a small saucepan and dissolve.
- Add to applesauce and mix well.
