CINNAMON CRUNCHIES
I made this recipe to add to a tray of goodies for a baby shower. They went over really well. But, are quite rich!

Steps:
- Mix margarine, both sugars& egg until light& creamy.
- Stir in oil.
- Add baking soda and salt; mix well.
- Add flour& continue mixing until smooth.
- Stir in chips, oats, cereal and coconut.
- Mix well.
- Drop by teaspoonful onto ungreased baking sheets.
- Bake at 325 degrees for 10-12 minutes.
- Cool for 2-3 minutes before removing from cookie sheet.
CRUNCHIES
These cookies are similar to Anzac biscuits, but are not as hard. They are very quick to make, and go down well with a cup of tea.

Steps:
- Boil butter or margarine and syrup together. Add soda. You should end up with a frothy mixture after soda is added. Stir in coconut, flour, sugar, and oats, and stir well. Press mixture lightly into a large baking tray.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool, and cut into bars.

Steps:
- Heat oven to 325 degrees and grease a cookie sheet.
- Beat egg white in a large bowl on high speed until foamy.
- Beat in cinnamon and salt.
- Gradually beat in brown sugar on med speed until thick and glossy.
- Fold in cereal until completely coated.
- Spread as thinly as possible on the cookie sheet.
- Bake 12-15 minutes (no more!!!) or until set.
- Immediately remove from cookie sheet using spatula.
- Cool and then break into pieces.
- Store in airtight container.

- Heat oven to 375°F.
- In large bowl, beat brown sugar, butter, shortening and eggs with electric mixer on medium speed until creamy. Add flour, cream of tartar, baking soda, salt and 1/4 teaspoon of the cinnamon. Beat on low speed until blended. Stir in cereal, coconut and pecans.
- In small bowl, mix granulated sugar and 1 teaspoon cinnamon. Shape dough into 1 1/4-inch balls; roll in sugar mixture. Place 2 inches apart on ungreased cookie sheets; flatten with glass dipped in sugar mixture.
- Bake 8 to 10 minutes or until light golden brown. Sprinkle with sugar mixture. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.

- In a large bowl, dissolve yeast in warm water. Add 3 tablespoons brown sugar, cinnamon and salt; mix well. Stir in enough flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Shape into 12 balls. Push thumb through each center to form a 1-1/2-in. hole. Stretch and shape dough to form an even ring. Place on a floured surface. Cover and let rest for 10 minutes., Fill a Dutch oven two-thirds full with water and remaining brown sugar; bring to a boil. Drop bagels, 2 at a time, into boiling water. Cook for 45 seconds; turn and cook 45 seconds longer. Remove with a slotted spoon; drain well on paper towels., In a small bowl, mix topping ingredients; sprinkle over bagels. Place 2 in. apart on baking sheets coated with cooking spray. Bake at 400° until golden brown, 15-20 minutes. Remove to wire racks to cool.

- Whisk the warm buttermilk, warm water, yeast, and 2 Tablespoons sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes or until foamy on top.
- Add the remaining sugar, the butter, egg, salt, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on low speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle.*
- Keep the dough in the mixer and beat on low speed for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1.5-2 hours or until double in size.
