Steps:
- Sift together flour, baking powder and salt. Mix the margarine, sugar, egg and vanilla until creamy.
- Blend in flour mixture. Chill 1 hour or until easy to handle.
- Preheat oven to 350 degrees.
- Shape into balls using level tablespoon of dough.
- Mix nuts with the 2 teaspoons cinnamon.
- Roll balls in nut-cinnamon mixture. Place on greased cookie sheet 2 inches apart.
- Bake 12 minutes.

CINNAMON DISCS
Steps:
- Cream butter and sugar. Add well beaten egg yolks and vanilla. Add flour with salt and baking powder. Mix well.
- Tablespoon of dough roll into balls with nuts and cinnamon. Place on greased cookie sheets 2 inches apart.
- Bake at 375°F for 8 to 10 minutes. Remove cookies from sheets right away.

CINNAMON HARD CANDY

Steps:
- Line a large cookie sheet with a 1 inch lip with foil.
- Butter the foil and set pan aside.
- Add water, sugar, corn syrup and food coloring to large heavy pan and stir until well mixed.
- Bring to a boil over medium heat stirring occasionally.
- Cover pan with lid and cook for 3 minutes (very important, this will dissolve the sugar crystals that may form on the sides of the pan)
- Take lid off pan and cook on medium-high heat, without stirring until a candy thermometer reaches 300°F (hard crack stage), about 25 minutes. (Be patient, don't turn up heat to speed this up as it can go from cooking to burning in a second and the whole batch would be ruined).
- Remove candy from heat stir in cinnamon oil (house will spell like cinnamon for days unless you open windows before you do this step, also be careful not to have your face right over the the pot).
- Quickly pour into prepared pan.
- Cool completely (about 45 minutes).
- Cover with a piece of plastic wrap and use a hammer to get pieces small enough to get into a large zip top bag, then smash inside the bag until they are bite sized.
- Add powdered sugar to bag and shake to coat all sides (note, check for holes in bag first, sometimes the candy punctures the bag).
- Enjoy.

- Line a 15x10x1-in. pan with foil; butter the foil and set aside. In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals. , Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as oil is very strong). Immediately pour onto prepared pan. Cool completely, about 45 minutes. , Break the candy into pieces using the edge of a metal mallet. Sprinkle both sides of candy with confectioners' sugar. Store in airtight container.

Ann Sathers Restaurant is a Chicago institution that is famous for wonderful Scandinavian dishes and their cinnamon rolls. This is the recipe for the rolls....there is nothing more comforting than a cold, snowy Sunday morning and these rolls baking in the oven.

Steps:
- In a large bowl, stir the yeast and 1 teaspoon of sugar into the warm water and let stand for 5 minutes; stir in milk, melted butter, 1/3 cup sugar, salt and 1 cup flour; beat with a spoon or an electric mixer until smooth.
- Gradually stir in 1 1/2 cups flour, keeping the dough smooth; if the dough is still moist, stir in 1 tablespoon flour at a time to make a soft dough; cover with a dry cloth and let it rise in a warm place until doubled in bulk, about 1 hour.
- Heat oven to 350°.
- Divide the raised dough in half.
- On a lightly oiled board, roll out (with a lightly floured rolling pin) and stretch 1 piece of dough to make a 12-by-8-inch rectangle; spread 2 tablespoons of the soft butter over the top of the dough; sprinkle with half of the brown sugar and cinnamon; beginning on the long side, roll up tightly, jelly-roll fashion.
- Repeat with remaining dough.
- Cut the dough into 2-inch slices; place on greased and floured baking sheets; let the dough rise (in a warm place) until doubled in bulk, about 45 minutes.
- Bake in the oven for 12-15 minutes, or until golden brown.
- Take the baking sheets out of the oven and place the cinnamon rolls on a wire rack to cool.
- Top rolls with powdered sugar icing immediately.
- Serve warm or at room temperature.
- Powdered Sugar Icing: Combine sugar, vanilla and 1 tablespoon milk in a small bowl; stir in additional milk, 1 teaspoon at a time, until icing is loose enough to drizzle.

- Peel apples and cut in half lengthwise; remove cores. In a large saucepan over medium heat, bring the water, sugar and candies to a boil, stirring constantly until sugar and candies are dissolved. Reduce heat; carefully add apples. Cook, uncovered, until apples are tender, about 8 minutes., With a slotted spoon, transfer apples to a serving dish; pour syrup over apples. Serve warm or chilled. Garnish with mint if desired.

- Unwrap candies and place in a medium heavy saucepan. Combine with water and begin cooking over medium heat, stirring frequently. While the candy is cooking, wash the apples well (you can even add a tiny drop of dish soap) and then dry them completely. Insert a wooden stick into each apple and set aside (as the candy mixture starts to boil and cook, you’ll need to stir constantly.)
- Use a thermometer (or an instant read thermometer like ThermoPop) to monitor the temperature. When it reaches 300 degrees F, remove from heat. If desired, add red food coloring. Dip the prepared apples into the mixture, coating evenly and twirling to remove the excess. Place on the prepared sheet and allow to cool completely.
