CINNAMON SPICED NUTS
I love these at Christmas but they freeze really well so I use them all year long. Any kind of nut works great, almonds, walnuts or pecans, etc. Great to snack on but even better in recipes! - 1. Preheat oven to 300 degrees F. Coat a baking sheet with nonstick cooking spray.
- 2. In a bowl, beat egg white until frothy
- 3. Stir in Brown sugar, cinnamon, cloves, ginger and vanilla. Add nuts; stir to coat.
- 4. Spread evenly into prepared pan. Bake for 30 minutes, stirring occasionally, until well golden brown. Remove from oven and cool completely. Store in an airtight container in freezer.
SUGAR 'N' SPICE NUTS
To tell the truth, I can't recall where this recipe came from. It's been a regular in my holiday baking, though, for many years. Between Thanksgiving and New Year's, I hand these out to almost everybody-even the mailman's been known to find a batch in the mailbox! I moved from a big city as a bride. My husband soon persuaded me to enter baked goods at our county fair-now, our son, 8, is my cookie tester, and our daughter, 6, is the egg beater.

- Place nuts in a large bowl. In a small bowl, beat egg white and orange juice with a fork until foamy. Add the sugar, orange zest, cinnamon, ginger and allspice; mix well. Pour over nuts and stir to coat. , Spread into an ungreased 15x10x1-in. baking pan. Bake at 275° for 45-50 minutes or until nuts are crisp and lightly browned, stirring every 15 minutes. , Cool completely. Store in an airtight container.

CANDIED NUTS

- In a large bowl combine sugar, cinnamon, ginger, nutmeg, and salt.
- Blanch nuts in boiling water for 1 minute. Drain and dry them off in a kitchen towel. Lightly toss them into the sugar mixture until coated. Remove nuts, and set aside the sugar spice mixture.
- Bring the oil in a deep fryer or a heavy-bottomed pan to 330 to 350 degrees-F (do not let the oil burn). *Hint: place 1 nut in the oil and when it starts to sizzle, add the rest of the nuts.
- Fry approximately 1 minute, the nuts will turn golden in color, and float. Remove from the oil and add directly to the sugar mixture and toss again. Carefully remove nuts and shake off excess sugar, let cool and serve.
