CINNAMON NUTMEG WHITE CHOCOLATE BLONDIES

Adapted from and inspired by recipe # 48582, butterscotch blondies. The store was out of butterscotch chips, and this came to mind when I saw the cinnamon chips.

Cinnamon Nutmeg White Chocolate Blondies image

Steps:

  • Preheat oven to 350°.
  • Grease 13 x 9 inch baking pan (I like to use the wrapper from the butter to do this).
  • Beat butter and sugars in a large mixing bowl until creamy.
  • Add eggs and beat well.
  • Sift together flour, baking soda, salt and nutmeg; gradually add to butter mixture, blending well.
  • Stir in cinnamon chips, white chocolate chips and nuts.
  • Spread into prepared pan. The batter will be very thick.
  • Bake 30 to 35 minutes or until top is golden brown and center is set.
  • Cool completely in pan on wire rack.
  • Cut into bars.

  • Preheat oven to 350°F (177°C). Line a 9×9, 11×7, or 9×13 inch baking pan with aluminum foil, leaving enough overhang on the sides to easily pull the blondies out of the pan and cut. I suggest using an 11×7 baking pan – that is what I have been using and the blondies are nice and thick.
  • In small bowl, combine flour, baking powder, and salt. Set aside. Using a hand or stand mixer fitted with a paddle attachment, beat the butter on high speed in a large bowl. Beat for at least 1 minute until creamy. Add sugars and beat for 2 full minutes on high speed until light and fluffy. Scrape down the sides and bottom of bowl as needed. Beat in the eggs and vanilla on high speed, scraping down the sides and bottom of the bowl as needed. On low speed, beat in dry ingredients until just combined. With a large wooden spoon or rubber spatula, fold in the white chocolate chips.
  • Spoon half the batter into pan. It will be a relatively thin layer, but try to spread it across the pan evenly. Combine the cinnamon and sugar and sprinkle on top of them bottom layer, reserving 1 Tablespoon for the top. Spread the remaining batter over top. Some of the cinnamon-sugar will mix into the top layer as you spread it, which is fine. Sprinkle the top with remaining cinnamon-sugar.
  • For a 9×9 or 11×7 baking pan, bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean. For a 9×13, bake 22-26 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely for about 1 hour.   • Preheat oven to 350°F/175°C. Line a 9×13-inch pan with parchment paper, leaving enough overhang on the sides for lifting the bars out of the pan after baking.
  • In a medium bowl whisk together flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  • In a large bowl whisk together melted butter, granulated sugar, and brown sugar. Whisk in the egg and vanilla extract. Add flour mixture and fold, using a rubber spatula or wooden spoon, just until combined. Do not over mix. Fold in chocolate and pecans.
  • Spread dough evenly into prepared pan and smooth the top. Bake for 22-25 minutes, until the top is lightly golden brown and slightly firm to touch, and the edges start to pull away from the sides of the pan. The bars should appear soft but will set once cooled; over baking will make them dry and cakey. Allow to cool to room temperature on a wire rack, then lift out of the pan and cut into squares. Serve warm or at room temperature.

  • Preheat oven to 350 degrees F. Line an 8 inch square baking pan with parchment paper overhang (or just grease it well with butter). In a double boiler (see post for tips), heat 1 cup of the white chocolate chips and 1/2 cup of butter, stirring continuously with a whisk till just melted, thick, and glossy. Do not let it get too hot or it will separate. Remove from the heat and let it cool, stirring occasionally.
  • Add sugar and whisk to combine, then add eggs and vanilla. Meanwhile mix salt, cream of tartar, cinnamon, and pinch of nutmeg with the flour. Add the flour mixture into the chocolate/egg mixture 1/4 cup at a time, stirring till just combined. Finally, fold in the reserved 1/2 cup of white chocolate pieces till just incoporated (or you can sprinkle them on top) - do not overmix.
  • Transfer batter to the prepared baking pan and sprinkle with cinnamon sugar mixture just enough to coat the top (you may have some leftover). Bake until blondies are lightly browned on the edges and the center is set, it will look a bit underdone but that's what you want for the gooey texture - about 28-30 minutes. Cool in the pan at least 15 minutes before using the parchment paper to lift the blondies to a cutting board. Cut into 12 squares.
