CREAM CHEESE SPRITZ
A hint of orange and cinnamon highlights these Christmastime classics. I like to add colorful sprinkles before baking them. The recipe is from a booklet that came with a cookie press in the 1950s...and I still have the press! -Sarah Bedia, Lake Jackson, Texas

- Preheat oven to 350°. Cream shortening, cream cheese and sugar until light and fluffy. Beat in egg yolk and vanilla. In another bowl, whisk together flour, salt and cinnamon; gradually add to creamed mixture and mix well. Stir in orange zest. If desired, add food coloring., Using a cookie press fitted with a disk of your choice, press dough 1 in. apart onto ungreased baking sheets. Decorate with candies and colored sugar as desired. Bake until set (do not brown), 9-12 minutes. Remove from pans to wire racks to cool.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in the eggs, orange zest and vanilla. Combine the flour, baking soda, cinnamon and salt; gradually add to the creamed mixture and mix well. Stir in the chips and walnuts. Cover and chill for 2 hours or until easy to handle., On lightly floured surface, roll out dough to 1/2-in. thickness. Cut with a lightly floured 3-in. round cookie cutter. Place 1 in. apart on greased baking sheets. , Bake at 375° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

- preheat the oven to 375f/190c. grease a large baking sheet.
- put the butter, sugar, and cream cheese in a large bowl and beat until light and fluffy. beat in the egg. sift in flour and baking soda and add the orange juice and 1 tsp of rind. mix well.
- drop about 30 rounded tablspoons of the batter onto the prepared baking sheet, making sure that they are well spaced. sprinkle with the raw brown sugar.
- bake in the oven for 10 minutes, or until the edges are lightly brown.
- let cool on a wire rack. decorate with the rest of the orange peel before serving.

CINNAMON ORANGE CREAM CHEESE COOKIES
I love orange and cinnamon together! Yum. You really don't need to chill these for as much time as the recipe calls for. 1 hour would be plenty. I chilled my dough overnight and had to wait for the dough to warm a little before it was able to be rolled out. Cut your cookies small. They do not spread as they cook. Nice shortbread-like cookie. Not too sweet and excellent with a cup of tea or hot chocolate. I double the zest and spices - it gives the cookies freckles. :)

Steps:
- Mix together flour, cinnamon, allspice and salt.
- In medium bowl, using electric mixer set on low, beat together butter and cream cheese. Beat in sugar . Add orange juice and peel.
- Add flour and spices, and beat until combined. Do not overbeat.
- Chill dough, wrapped in plastic wrap for 2 - 2 1/2 hours or until dough is firm.
- Preheat oven to 350°F
- Roll dough on a lightly floured surface until it is about 1/8 inch thick. Cut into your favorite cookie shape.
- Bake on a lightly greased cookie sheet in preheated 350°F oven for 8 to 10 minutes or until edges are lightly browned. Cool on wire racks.

- In a large bowl, cream together the butter and cream cheese with a hand mixer until smooth. Slowly add the powdered sugar until combined. Add egg, baking powder, vanilla, and salt. Mix to combine. Add flour in slowly until fully incorporated, scraping the sides as needed. Place in fridge for one hour to rest.
- Preheat oven to 375 degrees. In a small bowl, mix together the cinnamon and sugar. Set aside.
- Roll dough into 1 inch sized balls, about 2 teaspoons worth of dough. Roll until coated in the cinnamon sugar mixture. Place on a parchment lined cookie sheet about 2 inches apart.
- Bake for 8-9 minutes, until just set. Do not overbake, it is hard to tell when these cookies are ready, they will puff up but won't get golden brown. Let cool on baking sheet for 10 minutes. Transfer cookies to a wire rack and let cool completely.
