Steps:

  • Combine preserves and port in a small saucepan. Heat over medium heat until thickened, about 6 minutes. Remove from heat and set aside to cool.
  • Fill each tart shell with 1 tablespoon fig/port mixture.
  • Whip cream in a large ice cold bowl, using an electric mixer. Gradually add the sugar and cinnamon extract and whip until stiff peaks. Place the whipped cream in a resealable plastic bag and cut 1/2 inch off the corner of the bag.
  • Top each tartlet with a dollop of whipped cream. Garnish with a dusting of cinnamon and powdered sugar.

1 (12-ounce) jars royal fig preserves
1/4 cup port
1 package pre-made mini phyllo tart shells (recommended: Athens)
2 cup whipping cream
3 tablespoons sugar
1/4 teaspoon cinnamon extract

French Fig Tarts image

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with the steel blade. Pulse a few times to combine. Add the butter and pulse 10 to 12 times, until the butter is the size of peas. With the motor running, pour the ice water down the feed tube and pulse just until the dough starts to come together. Dump onto a floured board and knead quickly into a 5-inch-round flat disk. Wrap in plastic and refrigerate for exactly 1 hour.
  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • On a floured board, roll the dough to a rectangle a little larger than 10-by-14 inches. Wrap the dough around your rolling pin and transfer it to the prepared pan. Using a ruler and a small knife, trim the dough to a 10-by-14-inch rectangle. Refrigerate for 15 minutes.
  • Remove the stem of each fig and cut them in quarters through the stem (or in sixths, if the figs are very large.) Place the figs in rows on the dough. Sprinkle with the full 1/2 cup of sugar and dot with the butter.
  • Bake for 50 minutes to 1 hour, until the pastry is browned and the fruit starts to brown. Rotate the pan once during baking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The juices will burn in the pan but the tart (and the pan!) will be fine! When the tart's done, loosen it from the pan while it's still warm and transfer it to a board or clean piece of parchment paper.
  • In a small pan, heat the apricot jelly with 2 tablespoons water and brush the fruit and pastry completely with the mixture. Allow to cool, cut into squares, and serve warm or at room temperature.

Steps:

  • Heat grill to medium high. Cut a deep cross in the top of each fig then ease the top apart like a flower. Sit the figs in a baking dish and drop a small piece of the butter into the centre of each fruit. Drizzle the honey over the figs, then sprinkle with the nuts and spice.
  • Grill for 5 mins until figs are softened and the honey and butter make a sticky sauce in the bottom of the dish. Serve warm, with dollops of mascarpone or yogurt.

  • Position a rack in the lower third of the oven and preheat to 400°F. Have ready a 12-inch oven-safe skillet, preferably cast iron. Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the puff pastry until it's about 1½ inches wider than the skillet. Dock the dough all over with a fork. Using the rolling pin, gently transfer the dough by wrapping it around the pin and unfurling it onto the prepared baking sheet. Chill the dough while you work on the figs.
  • Melt the butter in the skillet over medium heat. If using the vanilla bean, rub the seeds into the sugar with your fingertips. Stir in the cinnamon, if using, and the salt. Sprinkle the sugar mixture evenly into the pan and let it melt for 15 to 30 seconds. Stir to help dissolve the sugar, then continue to cook without stirring until the mixture begins to caramelize, about 5 minutes. You can swirl the pan occasionally to keep the heat distributed and the mixture browning evenly, but avoid stirring it.
  • When the mixture has caramelized, swirl to evenly coat the whole base of the pan. Turn off the heat and carefully arrange the figs in an even layer. Be sure to pack them in as tightly as possible?they will shrink as they cook and you don't want too many gaps between the fruit after baking.
