Rustic Apple Pie Crostata image

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the apples with 1/2 cup of the brown sugar, the cornstarch, lemon juice and cinnamon. In another small bowl, combine the remaining 3 tablespoons brown sugar, the oats, butter, flour and salt.
  • Place the piecrust on the prepared baking sheet. Spoon the apple mixture in the middle of the pie, leaving about a 1-inch border. Fold the crust edges over the filling, pleating occasionally. Spoon the oat mixture over the apples. Brush the crust with the egg and sprinkle with the raw sugar. Bake until the crust is golden brown and the apples are tender, 40 to 45 minutes.
  • Pulse the flour, salt and sugar in a food processor. Add about one-third of the butter; process until the butter is combined. Pulse in the remaining butter in 5 or 6 pulses to form coarse crumbs. Add the vinegar; pulse quickly a few times while adding 1/3 cup ice water. Squeeze some dough between your fingers. It should just hold its shape; if it's still crumbly, quickly pulse in more ice water by the tablespoonful. (Do not overwork the dough.)
  • Turn the dough out onto a large piece of plastic wrap. Wrap the dough, then press and flatten into a thin round. Refrigerate 1 hour.
  • Roll out the dough into an 11-to-12-inch round, about 1/8 inch thick, on a lightly floured surface. Center over a 9-inch pie plate. Fold in the edges and crimp as desired. Refrigerate at least 30 minutes before using.

Flat Apple Pie with Perfect Pie Crust image

Steps:

  • Preheat the oven to 375 degrees F.
  • In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.
  • With a rolling pin, begin rolling out the Perfect Pie Crusts into large circles. Roll the dough from the center outward. Be gentle and patient, it'll take a little time to get the dough completely rolled out.
  • If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes, no back-and-forth rolling.
  • Again with a spatula, loosen and lift the dough and carefully place the circles on large baking sheets.
  • Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic - the more rustic the better. Dot the tops of the pies with chunks of the butter.
  • Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminum foil for the remaining baking time.
  • Allow to cool slightly, then slice into wedges with a pizza cutter. Eat 'em on the go!
  • Combine the flour and salt in a large bowl. Add in the butter and shortening. Using a pastry cutter, gradually work the butter and shortening into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
  • Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl.

Steps:

  • Position a rack in the center of the oven and preheat to 350°F. Line a half-sheet pan with parchment paper.
  • To make the filling, gently toss the apples, sugar, flour, maple syrup, lemon juice, cinnamon, and vanilla in a medium bowl until well combined.
  • Make the streusel. Combine the flour, superfine sugar, brown sugar, and cinnamon in a small bowl. Stir the melted butter and vanilla together in another small bowl. Gradually stir the butter mixture into the flour mixture, just until evenly moistened (you may not need all of the butter). Squeeze the mixture in your hands until thoroughly combined. Crumble the mixture in the bowl to make fine crumbs with some small lumps.
  • Lightly flour a work surface. Unwrap the dough and rap the entire circumference around its edge on the work surface. Dust the top of the dough with flour. Roll out into a 15-inch round. Transfer the dough to a 9-inch pie pan, centering it in the pan, and let the excess dough hang over the sides. Heap the apples in the crust, mounding them high in the center. Bring up the edges of the dough, pleating the dough as needed around the circumference of the dish - the center of the filling will be visible. Brush the exposed crust with the egg. Place the streusel over the exposed filling to cover it, then sprinkle any remaining streusel over the crust.

Hubby wanted a dessert today so I made this for him....I hadn't made him a dessert in a bit so guess his sweet tooth was calling!!! Well, I wanted to eat some dessert too...so since I am a diabetic I made it this way. We ate it right from the oven while it was hot with vanilla ice cream melting down over it...

Steps:

  • 1. Melt the 2 T of butter in a large skillet (or heavy bottom saucepan) over medium-high heat. Add brown sugar/splenda blend and white splenda; cook 2 minutes or so, until sugars dissolve. Stir in apple slices, lemon juice and cinnamon (or nutmeg; or 1 t each whatever you like best). Cover, reduce heat, and cook 20 minutes or until apples are tender, stir occasionally. Remove from heat and let cool to room temperature.
  • 2. Place the pie dough into an 8" round deep-dish baking pan and shake some cinnamon/splenda over dough (as much as you'd like). Pour cooled apples in center of dough, staying about 2" from edges. Fold the edges of dough up toward the center, dough only partially covering your apple mixture, leave it wavy around the edges. Spray the edges of dough, (part you pulled up over fruit mixture), with some I Can't Believe it's Not Butter butter. Then shake with the cinnamon/splenda, that you've mixed in a shaker-jar, evenly over dough. Bake the at 375° for 30 to 45 minutes or until golden brown and juices are bubbling. (I only baked it for 30 minutes, but I know ovens vary, so bake it until it's done for you).
  • 3. For my Hubby, today (5-20-13), I turned this into a "Rustic Blueberry Pie".....the reason I say for him is because I'm allergic to blueberries and can not eat any of it. So, for him I did not make it sugar-free (because he likes his sweets).

Cin's Splendid Apple-Cranberry Pie image

Steps:

  • Preheat oven to 375. Place one pastry in bottom of a 10" round deep-dish pie plate.
  • Peel, core and cut apples into chunks. Sprinkle with Fruit Fresh and squirt with lemon juice (to keep from turning brown); hand-toss to mix.
  • Add Splenda, cranberries, Nectar, cinnamon, salt, nutmeg and extracts to apple chunks and hand-toss to mix.
  • Pour the apple mixture into crust and dot with butter. Place top crust on, crimp edges, sprinkle some Splenda over top crust and place in oven on top of a cookie sheet or aluminum foil to catch drips (if any).
  • Bake for 55 minutes. Cover edges of crust for the last 20 minutes of baking time, so the crust edges don't get too brown.
  • Serve hot from the oven with vanilla ice cream (pie was also "splendid" served at room temperature).

  • For the crust, pulse flour, sugar and salt in a food processor until blended. Add butter; pulse until butter is the size of peas. While processing, add just enough ice water to form moist crumbs. Steps:

  • Melt butter in a large skillet set over medium-high heat and add apples to the pan. Stir to coat with butter and cook, stirring occasionally, until the butter is evenly distributed, about 1 minute.
  • In a small bowl, whisk together sugars, spices and salt. Sprinkle over the apples and toss to combine.
  • Lower heat to medium and cook until apples have softened completely but still hold their shape, about 17 to 25 minutes. (Some varieties cook more quickly than others.)
  • Sprinkle cornstarch evenly over the apples and continue to cook, stirring occasionally, until the apple mixture comes to a simmer and thickens slightly, about 2 minutes. Remove pan from heat, and stir in lemon juice and zest. Allow apples to cool completely (spreading them onto a rimmed baking sheet speeds this up). Apples can be prepared up to 24 hours ahead and refrigerated.
  • On a lightly floured surface, roll half of the pie dough into a 12-inch circle. Transfer dough to a 9- or 10-inch metal pie plate, trimming it to leave a 1/2-inch overhang. Place crust in the freezer for 30 minutes or up to 24 hours.
  • When ready to bake, place a rimmed baking sheet on the middle oven rack and heat oven to 425 degrees.
  • Roll out the remaining dough on a lightly floured surface to a 10- to 11-inch circle. Remove pie crust from freezer and add the cooled filling in an even layer. Cover apples with remaining dough. Press the edges together, trim the excess dough, and crimp the edges with your fingers or a press down with the tines of a fork. (Using a fork might be easier if the bottom crust is too cold to crimp.) Brush the top of the pie with cream, milk, or some beaten egg, then sprinkle lightly with sugar if you like. Using a sharp knife, cut some steam vents in the top of the crust.
  • Place pie on the hot sheet pan and bake for 20 minutes. Reduce heat to 375 degrees and bake for another 30 to 40 minutes, until the filling bubbles in the steam vents, and the crust is golden brown. Transfer pie to a wire cooling rack and allow to cool for at least 2 hours before serving. The pie can be baked up to 24 hours ahead of serving; do not refrigerate before serving.
