THE BEST CLAM SAUCE

I cannot order better white clam sauce in a restaurant. My boyfriend begs me to make this! Thanks Mom! Serve this dish with fresh garlic bread and a nice white wine. I promise this is a keeper and you won't like any other white clam sauce!

Steps:

  • Bring a large pot of salted water to a boil, add linguini and return water to a boil. Let linguini cook until al dente; drain well.
  • In a large skillet, saute the onion and garlic in olive oil until the onions are translucent. Drain the cans of minced clams, reserving half of the juice.
  • Stir the clams, reserved juice, butter, salt and pepper, and wine. Simmer the mixture for 20 minutes, until the sauce has reduced 1/3 and has thickened.
  • Spoon the clam sauce over the linguini and serve.

Clam & Prawn Sauce With Asparagus image

Steps:

  • Boil large pot of water for pasta.
  • Heat olive oil at medium heat in large stove-top pot. Add onion and prepared garlic. Stir until onion is soft.
  • Add chowder, gradually stir in milk. Stir in clams with liquid. Add cream cheese in chunks. Add lemon juice. Simmer and stir until cream cheese blends in to sauce. Add parmesan cheese and fresh pepper, stir and simmer.
  • Cook pasta according to package directions. Drizzle with a small amount of olive oil and toss. Sprinkle with basil.
  • Add shrimp to pasta sauce and heat through.
  • Asparagus.
  • Break off the end nodes of asparagus, rinse in colander and place in a microwave safe casserole with lid. Cook at high for 5 minutes. Let stand.
  • Microwave asparagus at high for 2 additional minutes just before serving. Add a little salt and butter.

Shrimp Cream Sauce with Shaved Asparagus image

Steps:

  • Melt butter and oil together in a pan over medium heat. Add shrimp and season with salt and pepper to taste. Cook and stir until mostly opaque, about 1 minute, then transfer shrimp to a bowl.
  • Add shallots and garlic to the pan and cook until tender, about 2 minutes. Add wine and cook until reduced by about 1/3, about 3 minutes more. Add shaved asparagus and season with salt and pepper to taste. Cook until slightly tender, about 2 minutes. Add cream and bring to a slow simmer, about 5 minutes.   • In the same hot skillet, add 2 Tbsp oil and 2 Tbsp butter. Once the butter is melted, add minced garlic and sautee, stirring frequently for 1 minute. Add shrimp in a single layer and season with 1 tsp salt and 1/4 tsp black pepper. Saute until shrimp are pink and not translucent (about 2 minutes per side). Be careful not to overcook or shrimp will be tough.
  • Add 1/4 cup lemon juice, 1/3 cup chopped parsley, 1 Tbsp lemon zest and stir to combine. Turn off the heat and return pasta and asparagus to the pan. Toss everything to combine and serve with grated parmesan.
