CLASSIC, HEARTY BEEF STEW
This classic beef stew recipe makes sure you really make the most of each step of the cooking process to end up with a beautiful, rich, and hearty beef stew!

- Preheat the oven to 350 degrees F (175 degrees C).
- Place beef cubes into a large bowl. Season with kosher salt and black pepper. Add flour and paprika and toss until evenly coated.
- Heat oil in an oven-safe Dutch oven over medium-high heat. Sear the beef cubes in batches until dark brown, about 4 minutes per side. Flip or stir gently with a wooden spoon until all edges are dark brown, 2 to 3 minutes more. Remove beef and set aside.
- Add onions to the beef fat with more salt and pepper; cook and stir until they begin to caramelize, about 10 minutes. Add garlic and stir until aromatic and soft, about 30 seconds. Stir in tomato paste and cook until it turns brown and begins to caramelize and stick to the bottom of the pan. Deglaze with red wine, scraping up the flavorful browned bits on the bottom. Let the wine reduce until almost dry again, about 3 minutes.
- Add dried thyme, dried rosemary, herbes de Provence, and bay leaves. Add 2 cups beef broth and Worcestershire, stir, and bring to a boil. Add the seared beef cubes back into the stew liquid. Remove from heat and cover the pot.
- Braise in the preheated oven until meat is almost tender, about 1 1/2 hours. Remove from the oven. Add carrots, potatoes, and more beef broth if needed. Cover and return to the oven to braise until meat and vegetables are tender, about 30 minutes longer.
- Discard bay leaves. Stir in peas, fresh rosemary, and fresh thyme. Serve hot.

- 1. Pat beef dry with paper towels.
- 2. In a large bowl, mix arrowroot, 1/2 tablespoon salt, and 1 teaspoon black pepper. Add the beef and toss until coated.
- 3. Heat a soup pot or Dutch oven over medium heat. Add the cooking fat and allow to melt, then add the beef and brown on all sides. Give the meat plenty of breathing room so it forms a nice crust; you might have to cook it in batches. As it browns, remove to a bowl.
- 4. When the meat is browned, add the onion, carrot, celery, and garlic to the same pot. (If it's dry, add another teaspoon or two of cooking fat.).
- 5. Saute the vegetables until they are soft and golden, about 10 minutes.
- 6. Add the tomato paste, 1 teaspoon of salt, 1/2 teaspoon black pepper, bay leaves, and thyme. Cook, stirring often, about 2 minutes.
- 7. Pour in the broth and stir to combine.
- 8. Add the beef and accumulated juices to the pot.
- 9. Cover and simmer for 1 hour.
- 10. Add the potatoes to the pot and simmer another hour, until the meat and potatoes are tender.
- 11. Simmer uncovered for 5-10 minutes to thicken the gravy, then sprinkle with minced parsley before serving.

- In an oven-safe Dutch oven, brown beef in batches in oil; drain. Return all meat to the pan. Add onions, tomatoes, broth, tapioca, garlic, parsley, salt, pepper and bay leaf. Bring to a boil. , Cover stew and bake at 350° for 1 hour. Stir in carrots, potatoes and celery. Bake, covered, 1 hour longer or until meat and vegetables are tender. Discard bay leaf.

- In a large stock pot over medium heat, heat the oil. Working in batches (mine needed 2), add the beef and sear on all sides until golden, 2-3 minutes per side. Remove the beef from the pot and continue browning until all the meat is browned, adding more oil and adjusting the heat as necessary.
- Add a bit more oil to the pot and add the mushrooms and cook until browned, about 3 minutes. Then add the onions, carrots, and celery and cook for 3-5 minutes. Add in the garlic and cook until fragrant, about 1-2 minutes, careful not to burn. Add the beef back to the pot, then tomato paste and arrowroot flour and stir to coat the beef and veggies.
- Stir in the broth slowly, scraping the browned bits at the bottom of the pot. Add the rosemary, thyme and bay leaves and season with salt and pepper. Bring to a boil, then lower the heat to a simmer at medium-low heat. Simmer until the beef is tender, about 45 minutes, then add in the turnips and continue to simmer until tender, about 35 more minutes. Discard the thyme, rosemary and bay leaves and garish with fresh thyme or parsley if desired before serving.
