CLASSIC WHITE BREAD

Classic White Bread image

Steps:

  • Sprinkle yeast over 1/2 cup water. Add 2 teaspoons honey. Whisk until yeast dissolves. Let stand until foamy, about 5 minutes. Transfer to the bowl of a mixer fitted with the paddle or dough-hook attachment. Add butter and remaining 1 3/4 cups water and 3 tablespoons honey. Whisk flour with salt; add 3 cups to yeast. Mix on low speed until smooth. Add remaining 4 cups flour, 1 cup at a time, mixing until dough comes away from sides of bowl and forms a ragged, slightly sticky ball. Butter a large bowl.
  • Knead dough on a floured surface until smooth and elastic but still slightly tacky, about 5 minutes. Shape into a ball. Transfer to prepared bowl; cover with plastic wrap.
  • Let dough stand in a warm place until it doubles in volume (it should not spring back when pressed), about 1 hour. Butter two 4 1/2-by-8 1/2-inch loaf pans. Punch down dough; divide in half.
  • Shape 1 dough half into an 8 1/2-inch-long rectangle (about 1/2 inch thick). Fold long sides of dough in to middle, overlapping slightly. Press seam to seal. Transfer dough, seam side down, to pan. Repeat with remaining dough. Brush each loaf with butter, or dust with flour for a rustic look. Preheat oven to 450 degrees. Drape loaves with plastic. Let stand until dough rises about 1 inch above tops of pans, 45 minutes to 1 hour. Reduce oven temperature to 400 degrees. Bake, rotating pans after 20 minutes, until tops are golden brown, about 45 minutes. Transfer to wire racks. Let cool slightly; turn out loaves. Let cool completely before slicing.

CLASSIC WHITE BREAD (SALLYE) image

Steps:

  • 1. In microwave, warm milk to 105º (about 20 seconds). Remove from microwave and whisk oil or melted butter into milk until well blended. CAUTION: DO NOT OVERHEAT MILK. If it is too hot, it will kill the yeast action. If you don't have a thermometer, sprinkle a bit of milk on your inside wrist; it should be just lukewarm. Gently pour into bread machine baking pan. Sift flour, sugar and salt together (Note: You don't have to sift the flour, but I find it makes the bread lighter in texture) Carefully pour over milk and oil mixture. Make sure that all liquid is covered completely by flour
  • 2. Make a small depression in middle of flour and pour yeast into it. Close lid and start bread machine in basic cycle. OPTION NOTE: For a lighter textured bread, allow the bread machine to go through the first kneading cycle. Turn machine off and start up from the very beginning again. This will give the dough an extra knead which will result in a lighter bread.
  • 3. SECOND OPTION NOTE: If you wish to make yeast rolls, prepare this recipe per instructions EXCEPT set bread machine to dough cycle. When warning "ding" sounds, remove dough from bread machine and turn out onto a clean dry surface. Make balls of dough and place in lightly greased muffin tins and cover with clean porous towl. Balls should not fill the muffin tin cavity over 2/3 full. Set tins in warm dry area and allow to rise until double in size. Place in oven preheated to 350º F and cook for for about 25 minutes (until golden brown). When bread is done, brush with melted butter (option). Do not wrap until bread has cooled. Otherwise it will sweat and become limp. This is a basic recipe. You can add dried herbs or fruits to the flour mixture if you wish. Enjoy

Steps:

  • In a small saucepan, heat milk until it bubbles. Remove from heat and add the sugar, salt and shortening. Cool to lukewarm. While milk mixture is cooling, dissolve yeast in warm water and let stand until creamy.
  • Combine cooled milk mixture with yeast and water in a large mixing bowl. Stir in 2 cups of the flour, then add the remaining flour, 1/2 cup at a time, to make a moderately stiff dough. Knead on a lightly floured surface for 8 to 10 minutes, or until smooth and elastic. Place the dough in a lightly oiled bowl and turn to coat the dough. Cover the bowl with a damp towel and let rise in a warm place until the dough has doubled in volume (about 1 1/4 hours).
  • Lightly grease two 9x5 inch loaf pans. Punch down the dough and turn it out onto a lightly floured surface. Shape into 2 balls, cover and let rest 10 minutes. Shape dough into 2 loaves and place in pans; let rise until doubled (about 1 hour). Preheat oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven for 35 minutes or until the top is golden and the loaf sounds hollow when tapped on the bottom.

Steps:

  • Make the dough by tipping the flour, yeast and salt into a large bowl and making a well in the middle. Pour in most of the water and use your fingers or a wooden spoon to mix the flour and water together until combined to a slightly wet, pillowy, workable dough - add a splash more water if necessary. Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook. Place the dough in a clean oiled bowl, cover with cling film and leave to rise until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7. Knock back the dough by tipping it back onto a floured surface and pushing the air out. Mould the dough into a rugby ball shape that will fit a 900g loaf tin and place in the tin. Cover with a clean tea towel and leave to prove for 30 mins. Dust the top of the loaf with a little more flour and slash the top with a sharp knife if you want. Bake the bread for 15 mins, then reduce the heat to 190C/fan 170C/gas 5 and continue to bake for 30 mins until the loaf sounds hollow when removed from the tin and tapped on the base. Leave the bread on a wire rack to cool completely. The loaf will stay fresh in an airtight container for 3 days or can be frozen for 1 month.

  • In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.   • Preheat oven to 425 degrees F (220 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

Steps:

  • 1. Place ingredients in bread machine in exact order as listed in ingredients.
  • 2. Set bread machine to basic/white cycle and medium crust. •••Do not use delay cycle.
  • 3. Check dough after it has mixed well. If it is too dry, add liquid 1 teaspoon at a time until a soft, smooth ball forms around the blade. If it is sticky, add 1 teaspoon flour at a time until smooth ball forms around the blade.
  • 4. Start bread machine and cook until cycle is complete.
  • 5. Remove from bread machine onto serving platter and drizzle your choice of glaze over it (optional).

PLACE INGREDIENTS IN BREAD MACHINE IS THIS EXACT ORDER
1-1/3 c warm milk (105º)
1 large egg, slightly beaten
3 Tbsp softened butter
1-1/2 tsp salt
1 Tbsp granulated sugar
4 c bread flour

Steps:

  • Dissolve yeast in 3/4 cup warm water. Stir in 2 2/3 cups warm water, sugar, salt, shortening and 5 cups of the flour.
  • Beat until smooth.
  • Mix in enough remaining flour to make dough easy to handle.
  • Turn dough onto lightly floured board; knead until smooth and elastic, about 10 minutes.
  • Place in greased bowl; turn greased side up.

  • Remove from pans immediately.

EXCELLENT WHITE BREAD

This straightforward loaf is the white bread of your dreams, and its fluffy slices make for evenly browned toast. Steps:

  • In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
  • Grease a large bowl with butter and turn dough out into the bowl. Flip over dough so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 1 1/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
  • When dough has doubled in size, turn it out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
  • Press down dough with your hand to expel the air. Divide dough in half and place each half into a loaf pan. Brush tops of loaves with remaining melted butter.
  • Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
  • Heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. Remove loaves from pans and let cool on wire racks.

  • In large bowl, stir 3 1/2 cups of the flour, the sugar, salt, shortening and yeast until well mixed. Add warm water. Beat with electric mixer on low speed 1 minute, scraping bowl frequently.   • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 425°F.
  • Bake 25 to 30 minutes or until loaves are deep golden brown and sound hollow when tapped. Remove from pans to wire rack. Brush loaves with butter; cool.
