CLEVER CONNIE'S SWEET & SOUR PORK CHOPS
I work with developmentally-challenged adults - a few without dentures, some without the motor-skills to handle knives and forks. My extraordinarily clever supervisor came up with this recipe allowing them (and a spoon) to enjoy the taste of a good pork chop. The meat falls from the bone and shreds easily. The sauce creates a taste of China.

Steps:
- Set the oven at 250 degrees Fahrenheit.
- Trim excess fat off the pork chops.
- Add oil to frying pan and heat on high.
- Add garlic and swirl around for 30 seconds- don't let it brown or burn.
- Lower heat under frying pan. Brown the chops on both sides.
- Remove chops and place in an ovenproof baking dish in a single layer.
- Scrape the garlic and "brown bits" from the frying pan onto the top of the chops.
- Mix remaining ingredients together well and pour over the chops.
- Place chops into the oven.
- Lower heat to 200 degrees Fahrenheit.
- Leave chops in the oven for 2 hours or more.
- When the chops come from the oven - the longer the better - the meat will fall from the bones and the fat is easily removed.
- Shred the pork and return it to the "sauce".
- Leave the meat in the oven until you are ready-to-serve.
- Serve over rice.
EASY SWEET AND SOUR PORK CHOPS
Being a busy single mom, I look for recipes that are quick, simple and don't have 100 ingredients. This one fits the bill to a T. I've served it to my picky parents and sisters who loved it and my 6 year old always asks for seconds (and even thirds at times)! Original recpie called for equal parts of wet ingredients, but I found it too salty and reduce the soy sauce slightly.

- Preheat oven to 350 degrees.
- Place chops in glass baking dish.
- Mix honey, chili sauce and soy sauce in a bowl.
- Pour mixture over pork chops and bake at 350 degrees for one hour or until no longer pink inside.
- I always make mashed potatos and use the left over juices as a gravy.

- Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm. , Add the water, vinegar, brown sugar, soy sauce and Worcestershire sauce to skillet; stir to loosen browned bits. Bring to a boil. Combine cornstarch and cold water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. , Return chops to the pan. Reduce heat; cover and simmer for 4-5 minutes or until meat is tender.

SIMPLE & SAVORY SWEET AND SOUR PORK CHOPS
These are so simple, but the flavor is fabulous. You can also use Catalina, Russian, or Western dressing as a substitute for the French Dressing. Excellent with wild rice or potatoes, and a veggie, for a perfect meal!!!!

- Place pork chops in a greased 8" x 8" (or larger) glass casserole dish.
- Mix soup mix, cranberry sauce, and dressing together in a bowl until well blended.
- Pour over pork chops, and bake in a 350 degree oven for 45 minutes - 1 hour.
- This can also be made with boneless or bone-in chicken breasts.
- Enjoy!

- To make the pork chops: Combine sherry, pepper, 1 tbsp of the soy sauce and 1/2 tsp of the sugar in a medium bowl. Add pork and gently toss until well coated. Let marinade in the refrigerator.
- Stir together pineapple juice, ketchup, vinegar, the remaining tbsp of soy sauce and remaining tsp of sugar in a small bowl until well combined.
- Heat 1 tbsp of the oil in a large, nonstick skillet over medium high heat until hot but not smoking. Add onion and cook, stirring occasionally, until browned but still a little crisp, about 2 minutes. Transfer to a large dish. Heat another tbsp of the oil in the same skillet over medium high heat until hot but not smoking. Add peppers and cook, stirring occasionally, until browned but still a little crisp, about 3 minutes. Transfer to the same dish.
- Heat remaining tbsp of oil in the same skillet over medium high heat until hot but not smoking. Add the pork cubes, arranging in a single layer. Cook, undisturbed, until a golden brown crust forms on the bottom, about 1 1/2 minutes. Turn the cubes over and cook until a golden brown crust forms on the other side, about 1 1/2 minutes.Return onion and peppers to the pan and toss to combine. Add pineapple juice mixture and cook, stirring, until sauce evenly coats everything and thickens slightly, about 2 minutes. Serve immediately.
- For the brown rice: In a saucepan, bring the stock to a boil and add the rice. Cover with lid and let simmer for 20-30 minutes. Using a fork, fluff the grains and serve.
- Should be 1 1/2 cups brown rice but it kept leaving that measurement out!
