- Preheat oven to 325°. Remove giblets from turkey; cover and refrigerate for gravy. Pat turkey dry; place breast side up on a rack in a roasting pan. In small bowl, combine softened butter, thyme and sage. With fingers, carefully loosen skin from turkey breast; rub butter mixture under the skin. Sprinkle salt and pepper over turkey and inside cavity; fill cavity with celery, onion and carrot., In a large saucepan, melt cubed butter; stir in wine. Saturate a four-layered 17-in. square of cheesecloth in butter mixture; drape over turkey. Bake turkey, uncovered, 3 hours; baste with wine mixture every 30 minutes, keeping cheesecloth moist at all times. , Remove and discard cheesecloth. Bake turkey until a thermometer inserted in the thigh reads 170°-175°, basting occasionally with pan drippings, 45 minutes to 1-1/4 hours longer. (Cover loosely with foil if turkey browns too quickly)., Remove turkey to a serving platter; cover and let stand 20 minutes before carving. Discard vegetables from cavity. Pour drippings and loosened brown bits into a measuring cup. Skim fat, reserving 1/3 cup. Add enough broth to remaining drippings to measure 4 cups., For gravy, chop reserved giblets. In a large saucepan, saute giblets in reserved fat until browned. Stir in flour until blended; gradually stir in broth mixture. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with turkey.Freeze option: Place sliced turkey in freezer containers; top with any cooking juices. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring occasionally; add a little broth or water if necessary.

SIMPLE ROAST TURKEY

- Preheat the oven to 275 degrees F.
- Remove the giblets from inside the turkey. Pat the turkey dry and place it on a roasting rack, breast-side up. Cross the legs and tie them together with kitchen twine. Tuck the wings under the bird and transfer the roasting rack to its pan. Season the turkey with salt and pepper. Cover the whole bird and pan with aluminum foil, tucking it all the way under the pan. Roast for the first stage for 10 minutes per pound, 3 to 3 1/2 hours for an 18- to 20-pound turkey.
- Meanwhile, place the butter, rosemary, thyme, sage, lemon zest and orange zest in a bowl. Mix together until combined.
- After the first stage of cooking, remove the turkey from the oven and remove the foil. The turkey will still be pale at this stage. Smear the butter mixture all over the skin and into the crevices of the turkey so that it is totally covered. Insert a meat thermometer into the thigh and increase the oven temperature to 350 degrees F. Return the turkey to the oven and roast, basting every 30 minutes, until the internal temperature on the thermometer reads 165 degrees F, an additional 1 1/2 to 2 hours.
- Put the turkey on a cutting board, cover loosely with fresh aluminum foil and rest for 25 to 30 minutes until you're ready to carve, saving the pan juices for gravy.

- Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
- Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
- Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 165 degrees F (75 degrees C), about 4 hours.
- Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

We get it; the idea of cooking a turkey in the oven can be intimidating. But trust us, it's easier than you may think, and we're here to walk you through every step. Our moist turkey recipe is so good; you may just be on "turkey duty" this Thanksgiving. Now, all that's left to do is add a few of your favorite sides, and dinner is served.

- Select a turkey that is plump and meaty with smooth, moist-looking skin. The skin should be creamy colored. The cut ends of the bones should be pink to red in color.
- If the turkey is frozen, thaw it either slowly in the refrigerator or in cold water or quickly in the microwave, following the manufacturer's directions. A turkey weighing 8 to 12 pounds will thaw in about 2 days in the refrigerator. A turkey weighing 20 to 24 pounds will thaw in about 5 days in the refrigerator. A whole turkey can be safely thawed in cold water. Leave the turkey in its original wrap, free from tears or holes. Place in cold water, allowing 30 minutes per pound for thawing, and change the water often.
- Remove the package of giblets (gizzard, heart and neck), if present, from the neck cavity of the turkey, and discard. Rinse the cavity, or inside of the turkey, with cool water; pat dry with paper towels. Rub the cavity of turkey lightly with salt if desired, but do not salt the cavity if you will be stuffing the turkey.
- Stuff the turkey just before roasting--not ahead of time. Fill the wishbone area (the neck) with stuffing first. Fasten the neck skin to the back of the turkey with a skewer. Fold the wings across the back so the tips are touching. Fill the body cavity lightly with stuffing; do not pack the stuffing because it will expand during roasting. Tuck the drumsticks under the band of skin at the tail, or tie or skewer the drumsticks to the tail.
- Place the turkey, breast side up, on a rack in a shallow roasting pan. Brush with melted butter or margarine. It is not necessary to add water or to cover the turkey. Insert ovenproof meat thermometer so tip is in thickest part of thigh and does not touch bone. Follow Timetable for approximate roasting time. Place a tent of aluminum foil loosely over the turkey when it begins to turn golden. When two-thirds done, cut the band or remove the skewer holding the drumsticks; this will allow the interior part of the thighs to cook through.
- Roast until the thermometer reads 165°F (for a whole turkey) and drumsticks move easily when lifted or twisted. Thermometer inserted in center of stuffing should read165°F. When the turkey is done, remove it from the oven and let it stand for 15 minutes for easiest carving. Keep turkey covered with aluminum foil so it will stay warm.

MEZCAL-AND-MAPLE-ROASTED TURKEY IN CHEESECLOTH

- For the turkey: The day before serving, pat the turkey dry using paper towels. Remove the neck. Place the turkey on a large, clean cloth and rub both the inside and outside generously with salt. Place the turkey and the neck in a container that fits comfortably and refrigerate, uncovered, overnight to allow the skin to dry out.
- Remove the turkey at least 2 hours prior to roasting to take the chill off it. Position the oven rack on the lowest rung and preheat the oven to 425 degrees F.
- Place the oranges, 1 onion, cinnamon stick and thyme in the body cavity of the turkey. Fold the wings and tuck the tips underneath the bird.
- For the butter sauce: Melt the butter in a small saucepan over medium heat. Add the maple syrup, mezcal and cloves. Bring to a gentle boil, then reduce to a simmer and cook, stirring occasionally, until fully incorporated, about 5 minutes. Remove from the heat and allow to cool slightly.
- Place the remaining quartered onions in the bottom of a roasting pan to act as a rack. Add the turkey neck, along with the sage. Drizzle the onions and neck with olive oil and season with salt and pepper. Set the turkey on top of the onions. Soak a double layer of cheesecloth big enough to cover the bird in the butter sauce, then drape it over the breast and legs of the turkey. Pour any remaining butter sauce over the turkey. Add the stock to the bottom of the pan.
- Roast for 45 minutes. Reduce the oven temperature to 375 degrees F and continue roasting until the skin is golden brown and the turkey juices run clear when an instant-read thermometer inserted into the thickest part of the thigh and breast registers 160 degrees F, another 10 to 15 minutes per pound (at least 1 hour and 40 minutes and up to 3 hours).
- Allow the turkey to rest at least 30 minutes before removing the cheesecloth and carving.

- The day before roasting, rinse the turkey inside and out with cold water, set on a clean kitchen towel and pat dry. Sprinkle the turkey inside and out with the salt. Wrap the turkey in plastic wrap and refrigerate, about 24 hours.
- Remove the turkey from the refrigerator 1 to 2 hours prior to roasting to bring to room temperature.
- Place an oven rack on the lowest rung and preheat the oven to 425 degrees F.
- Place a few sprigs of the oregano and thyme, a few cloves of the garlic and a quarter of the lemon in the turkey's neck cavity. Wrap the neck skin over and around the cavity to enclose the ingredients. Place half of the remaining oregano, half of the remaining thyme, half of the remaining garlic, 2 lemon quarters, half of the fennel, half of the onion and all the fennel fronds in the turkey's body cavity. Place the turkey, breast-side-up, on a rack set into a large roasting pan. Fold the wings and tuck the tips underneath the turkey.
- Melt the butter in a saucepan over medium heat, and then let cool.
- Fill a pot with the stock. Add the remaining oregano, thyme, garlic, 1 quarter lemon, fennel and onions to the pot. Bring the stock mixture to a boil, reduce the heat so that the liquid simmers and continue to cook at a low simmer, about 10 minutes. Remove the pot from the heat and allow to cool slightly.
- Soak a double layer of cheesecloth big enough to cover the turkey in the cooled butter and drape over the breast and legs of the turkey. Pour the stock mixture over the bird, pushing the pieces of vegetable and herbs into the bottom of the roasting pan. Add the reserved neck and gizzards to the bottom of the roasting pan.
- Place the turkey in the oven and roast, about 45 minutes. (There will be the distinct possibility of smoke depending on how clean your oven is). Turn the temperature down to 375 degrees F, and continue to roast until an instant-read thermometer inserted into the center of a thigh registers 160 degrees F, 15 to 20 minutes (removing the cheesecloth for the final 10 minutes to brown, if needed). Remove the turkey from the oven and allow to rest before carving, about 20 minutes.
BUTTER-BLANKETED TURKEY
This turkey is extra juicy and gorgeously browned, thanks to the blanket of butter.

- Position an oven rack in the lowest position (with room above to fit the turkey) and preheat the oven to 450 degrees F.
- Remove any turkey parts from the cavity and reserve for another use if desired. Dry the turkey well with paper towels inside and out. Sprinkle the cavity with 1 teaspoon salt and 1/2 teaspoon pepper. Stuff with the thyme, rosemary, lemon wedges and half of the onion wedges.
- In a small bowl, mix together the 4 tablespoons room temperature butter with the paprika to make a smooth, spreadable mixture. Using your hands, carefully separate the skin from the flesh of the turkey from the breasts toward the legs, making sure not to tear the skin. Spread about half of the butter mixture evenly between the skin and flesh on one side. Do the same on the other side using the remaining butter mixture. Any residual butter on your hands or in the bowl can be rubbed on the outside of the turkey. Sprinkle the outside of the turkey with 2 teaspoons salt, making sure to get it all over the surface.
- Scatter the celery pieces, whole carrots and remaining onion wedges in the bottom of a roasting pan. Place the roasting rack in the pan, making sure it is level. Pour the broth into the pan. Transfer the turkey to the rack, tuck the wings back under the body and tie the legs together with butcher's twine.
- Cut a 20-inch piece of cheesecloth and fold twice, creating 4 layers. Submerge the cloth in the melted butter, making sure it is completely saturated with it. Gently squeeze the cloth, then re-form so there are 4 layers and place on top of the turkey, covering it completely. Use a turkey baster to baste the cheesecloth with some of the remaining melted butter.
- Roast for 30 minutes, then lower the oven temperature to 350 degrees F. Baste the turkey with the pan juices and more of the melted butter. Continue to roast, basting with butter and pan drippings every 30 minutes, for an additional 2 hours.
- Very gently remove the cheesecloth from the turkey, taking care not to tear the skin (see Cook's Note). Baste one more time, then return the turkey to the oven with the breasts facing towards the back and roast until a thermometer inserted in the thickest part of a thigh measures 165 degrees F, about another 30 minutes. Let rest for 30 minutes before carving.
CLOTH COVERED ROASTED TURKEY
This is my mom's recipe. It is roasted, not steamed like you get when you cover the turkey in foil. The results are very tasty. Even the dark meat is delicious and moist. You do have to baste it often in the middle of its cooking. Make sure you use lots of butter so the cloth won't take the skin off. Recipe is for a 12 pound bird. Adjust butter and water accordingly for different size birds.

- Clean and stuff turkey as usual.
- Cover turkey completely and thickly with butter.
- Dust completely with flour.
- Take a clean white cotton cloth or a triple layer of cheese cloth large enough to completely drape over turkey and soak it in a mixture of hot water and the remaining butter (melted). If you want to, you can substitute broth or vegetable oil when you soak the cloth.
- Tie up turkey's wings like a belt with cotton twine and also tie legs together.
- Place in roasting pan with wings down and legs on top.
- Cover loosely with the cloth, covering all exposed parts. You can cut a hole in the cloth to stick in the thermometer.
- Pour any remaining liquid into the bottom of the pan.
- Baste every 15 minutes with juice in the bottom of the roasting pan. If there is no juice, use hot water/broth with oil/melted butter to baste.
- Remove cloth for last 1/2 hour if necessary to brown skin. You can salt and pepper the bird at this stage if you want to.
- Cook at 350 degrees for 15-18 minutes per pound.
- Let set for 15-20 minutes after cooking so juices will settle back into the meat. You can cover it with the pan lid or foil at this point to keep it warm. This is when you make the gravy.
