PARTY MEATBALLS

These meatballs in a sweet, tangy sauce can be made a day in advance and reheated. We usually serve them at birthday parties. - Irma Schnuelle, Manitowoc, Wisconsin.

Steps:

  • In a large bowl, combine the milk, soup mix and 2 teaspoons Worcestershire sauce. Crumble beef over mixture and mix lightly but thoroughly. , With wet hands, shape into 1-in. balls. Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 400° for 12 minutes or until meat is no longer pink. Drain on paper towels. , Meanwhile, combine the ketchup, brown sugar and remaining Worcestershire sauce in a Dutch oven. Bring to a boil over medium heat. Cook and stir until thickened. Reduce heat; add meatballs. Simmer until heated through, about 15 minutes.

1 envelope onion soup mix
5 teaspoons Worcestershire sauce, divided

1 cup packed brown sugar

COCKTAIL PARTY MEATBALLS

You can substitute a hotter pepper in place of the green pepper if you like it hot! Serve with a dipping sauce such as hot honey mustard etc. This came from Pogabs Cookbook. I have not tried this, just posting for safe keeping.

Steps:

  • Spray a cookie sheet with non-stick spray and set aside. In a large bowl, stir together the cottage cheese, egg whites, Worcestershire Sauce and 1/2 cup of the bread crumbs. Stir in the turkey breast, turkey sausage, onions and green pepper.
  • Shape the poultry mixture into 32 meatballs. On a sheet of wax paper, combine the parsley, celery leaves and remaining 2 tablespoons bread crumbs. Roll the meatballs in the parsley mixture until coated evenly.
  • Preheat the broiler. Transfer the meatballs to the prepared cookie sheet. Broil 3" to 4" inches from the heat for 10 to 12 minutes until browned on all sides and no longer pink in the center, turning occasionally. Serve with cocktail toothpicks.

Don't hate just because this is simple. I made this for a Christmas party with all of my business school friends and they loved it! I recommend using the Wolf's Neck Farm Organic Beef Meatballs. They are very tasty, organic and from my home town Freeport Maine.

  • Step 2 Add this to a crockpot and mix with the chili sauce. Add the meatballs and heat in the crock pot.

Steps:

  • In a large bowl, combine ground beef, bread crumbs, onion, milk, egg, salt, Worcestershire sauce, and ground black pepper. Mix together, and shape into meatballs.
  • In a large skillet, heat shortening over medium heat. Add meatballs, and cook until browned, about 5 to 7 minutes. Remove from skillet, and drain on paper towels.
  • Add chili sauce and jelly to skillet; heat, stirring, until jelly is melted. Return meatballs to skillet, and stir until coated. Reduce heat to low. Simmer, uncovered, for 30 minutes.

  • Add eggs to a large mixing bowl and gently whisk. Add all remaining meatball ingredients then mix until well combined. Use a small cookie scoop (1 1/2 tablespoon capacity) to roll into meatballs.   • Meanwhile, whisk all of the Cocktail Sauce ingredients together in a very large skillet off heat. Once combined, bring to a simmer, stirring constantly, until thickened, about 3-5 minutes.
  • Add the baked meatballs to the sauce and stir to evenly coat. Transfer meatballs to a serving platter or bowl with either cocktail picks or toothpicks nearby or you can pierce the meatballs. Serve warm. Alternatively, transfer to the crockpot and keep on the "warm" setting until ready to serve.
