CHOCOLATE BUTTERMILK SQUARES

- In a large saucepan, bring butter, cocoa and water just to a boil. Cool. , Meanwhile, preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. Add cocoa mixture and buttermilk; mix well. Beat in the eggs, vanilla and, if desired, food coloring. Pour into a greased and floured 15x10x1-in. baking pan. , Bake until set, 20 minutes. For frosting, melt butter with cocoa and buttermilk. Stir in the confectioners' sugar, vanilla and salt. Spread over warm cake. Garnish with nuts if desired.

COCOA BANANA BARS
These bars are very moist with a rich banana and chocolate flavor. They are an after-school snack that the kids will beg for.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. Add the egg and the vanilla and beat until well combined. Stir in the mashed banana, set aside.
- Stir together the flour, baking soda, baking powder, and salt in a separate large bowl, and make a well in the center. Pour the banana mixture into the well and stir just until combined.
- Remove half of the batter from the bowl. Mix the cocoa powder into the batter remaining in the bowl and stir well. Spread the cocoa batter in the bottom of the prepared pan. Spoon the remaining batter on top and use a knife to swirl the batter into a marbled design.
- Bake in the preheated oven until the edges are golden, about 25 minutes. Allow to cool before cutting into 24 pieces.

"COCOA BARS"

- Preheat oven to 375 degrees. Cream butter,add sugar and vanilla mix together.Add the eggs and stir in the milk.Sift together the flour,cocoa and salt.Mix it in with the creamed mixture and add the nuts.Spread the mixture into a greased 9"x9"x2" pan. Bake for 20 minutes. In a mixing bowl mix all of the frosting ingredients together until they are well blended. Frost at once while the bars are still warm,cool completely and cut into bars.
COCOA RIPPLE SQUARES
This is a delicious snack cake. It freezes well and packs well - great for lunch boxes, road trips or picnics. The recipe states to bake it in a 9" square pan, but an 11x7" baking dish works just as well.

Steps:
- In a mixing bowl, cream shortening and 3/4 cup sugar. Add eggs; beat until light and fluffy.
- Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition.
- Set aside.
- Combine cocoa, 1/3 cup walnuts and remaining sugar.
- Spoon a third of the batter into a greased 9" square baking pan.
- Sprinkle with half of the cocoa mixture.
- Dot with half of the butter.
- Repeat layers; top with remaining batter.
- Sprinkle with remaining walnuts.
- Bake at 350 for 35-40 minutes or until a toothpick inserted near the center comes out clean.
- Serve warm.
- Yield: 9 servings.

Steps:
- Preheat oven to 350 degrees F.
- Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
- Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
- Bake 25 to 30 minutes. Let cool before cutting into bars.
