GLAZED COCONUT-BANANA BREAD

Glazed Coconut-Banana Bread image

Steps:

  • Preheat oven to 350°. Grease and flour a 9x5-in. loaf pan. In a large bowl, beat butter and sugar until crumbly. Add eggs, one at a time, beating well after each addition. Beat in bananas, yogurt, apple juice and vanilla. In another bowl, whisk flour, baking soda and salt; stir into butter mixture. Fold in 1/2 cup coconut., Transfer to prepared pan. Sprinkle with remaining coconut. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool., In a small bowl, mix confectioners' sugar and lime juice until smooth; spoon over warm bread.

1/2 cup plus 1 tablespoon sweetened shredded coconut, divided
1/2 cup confectioners' sugar
1 tablespoon lime juice

COCONUT BREAD WITH GLAZE

I got this recipe out of the Wednesday paper. The coconut makes this a very moist bread! The coconut and coconut extract are very flavorful in this delicious bread. Very good with or without a glaze! This bread is actually better 2 - 3 days after being baked. It is great frozen and then thawed.

Steps:

  • 1. Spray two loaf pans with PAM. 325 degree oven Sift flour, baking powder, baking soda, and salt together in bowl. Stir sugar, oil, eggs, and extract together in large mixing bowl. Add sifted dry ingredients alternately with buttermilk. Stir batter until ingredients are just combined. Fold in coconut.
  • 2. Pour into two loaf pans. Bake for 55 minutes and check; bake another 5 - 10 minutes until tooth pick inserted comes out clean. GLAZE: powdered sugar, milk, margarine and coconut extract. Mix all well and pour over hot bread. It is not necessary to make a glaze; I just choose to do so. ENJOY!! This bread freezes very well.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, beat together sugar and vegetable oil. Beat in eggs and coconut extract. In a separate bowl, sift together flour, salt, baking powder and baking soda. Stir flour mixture into egg mixture alternately with buttermilk and coconut.
  • Bake in preheated oven for 45 minutes, until a toothpick inserted into center of the loaf comes out clean.

Carrot Bread With Hazelnuts, Coconut and Cream Cheese Glaze image

Steps:

  • Make the carrot bread: Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan or three 6-by-3-inch mini loaf pans.
  • Whisk the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl. Add the hazelnuts and coconut.
  • Whisk the eggs, melted butter, yogurt, vanilla and lemon zest (if using) in a medium bowl. Stir in the shredded carrots. Fold the carrot mixture into the flour mixture until just combined.
  • Spread the batter in the prepared pan(s). Bake until a toothpick inserted into the center comes out clean, about 55 minutes for a standard loaf or 35 to 40 minutes for mini loaves. Cool 30 minutes in the pan(s) on a rack, then turn out onto the rack to cool completely.
  • Make the glaze: Whisk the confectioners' sugar, cream cheese, milk and vanilla in a bowl. Pour over the cooled carrot bread and let set, 15 to 20 minutes.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat sugar and butter together in a large bowl with an electric mixer until smooth and well blended. Add eggs, one at a time, beating well after each addition.
