CARIBBEAN COCONUT BREAD

This is one of my favorite recipes, handed down to me from my boss's recipe box. It is great as a breakfast muffin, snack, or with a meal. Everyone will love this. Feel free to make it your own. Add nuts, raisins, coconut milk, or make it just how it is.

Caribbean Coconut Bread image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
  • Combine flour, sugar, coconut, baking powder, and salt in a large bowl; stir once or twice with a wooden spoon. Add eggs, milk, water, oil, coconut extract, vanilla extract, and cinnamon. Mix well until batter is blended.
  • Pour batter into the greased loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 15 minutes. Invert onto a wire rack to cool completely.

COCONUT BRUNCH BREAD

This coconut bread is delicious! It is soft, moist and has the perfect amount of coconut flavor. We love all the crunchy bits from the walnuts. The glaze on top makes a perfect coconut crust. They'd make a tasty gift!

Coconut Brunch Bread image

Steps:

  • 1. Beat in a large bowl. eggs, sugar, oil, and coconut extract.
  • 2. Mix dry ingredients.
  • 3. Add dry ingredients to egg mixture alternating with the buttermilk, coconut, and nuts.
  • 4. Spoon into 3 large loaf pans or 1 10" tube pan. Bake at 350 degrees. Bake loaf pans for 60 minutes checking after 50 minutes. Bake tube pan for 1 1/2 hours.
  • 5. While bread is baking combine sugar, water and margarine in a small saucepan. Boil for 5 minutes. Remove from heat and add the coconut flavoring.
  • 6. Remove warm breads from pan. Place back in pans and pour hot syrup over the top of the warm cake. Let stand for 4 hours. Remove from pans.
  • 7. Note: I make these in small loaf pans at Christmas time and give as gifts. Bake small pans for 25-30 minutes.

My MIL gave me this coconut bread recipe 20 years ago. It's one of my husbands favorites dishes to make for brunch.

Steps:

  • 1. Beat the eggs in large mixing bowl. Add sugar, oil and coconut flavoring and blend well. Sift together flour, soda, powder and salt. Add this to the egg mixture, alternating with buttermilk. Fold in flaked coconut and walnuts.
  • 2. Pour into greased and floured 10 inch bundt pan. 325 for 1 1/2 hours. Test
  • 3. After the cake comes out of the oven and while still in the bundt pan, combine the sugar, water and butter. Bring to a boil and simmer for 5 minutes. Remove the topping from the heat and add 1 teaspoon of coconut flavoring. Pour immediately over the warm bread and let stand 4 hours before removing from the pan

  • In a large bowl, combine the sugar, oil, eggs and extract. Combine the flour, baking powder, baking soda and salt; add to sugar mixture alternately with buttermilk, stirring just until moistened. Fold in coconut and walnuts. , Pour into two greased 8x4-in. loaf pans. Bake at 325° for 60-65 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes in pans before removing from pans to wire racks to cool completely.

Steps:

  • mix yeast with the 1/4 cup warm water with 1 tsp sugar let stand for 5 minutes till foamy.(yeast mixture).
  • in another bowl mix milk and and melted butter. (butter/milk mixture).
  • slowly pour half of the milk/butter mixture to the yeast mixture continue beating. add the flour ,alternate with milk/butter mixture. set aside (1/2 cup flour for shaping the dough).
  • then add 4 tbs sugar beat for 1 minute then last the salt.
  • beat till smooth 2 to 3 minutes.
  • put on oil bowl and cover with cloth. let rise for 1 hour till double bulk.
  • after 1 hour punch down the dough shape into balls( this dough is very sticky u can use now the 1/2 cup flour for shaping) and filled with coconut filling. i use 2 tbs spoon.
  • let rise for another 30 minutes to 40 minutes till double bulk.
  • bake for F350 for 30 minutes before baking brush with egg wash (egg wash 1 egg+tbs water or milk+butter).
  • COCONUT FILLING.
  • boil water and sugar in a saucepan.
  • add the flour until dissolve.
  • add the coconut flakes cook until little dry( not too dry ok).
  • then add margarine or butter.

Steps:

  • Preheat oven to 350°F. Butter and flour a 9- by 5- by 3-inch loaf pan, knocking out excess flour.
  • Toast and grind coconut:
  • Spread 3 cups coconut in a large shallow baking pan (1 inch deep) and toast in middle of oven, stirring occasionally, until evenly golden brown, 20 to 25 minutes. (Watch flakes carefully; edges burn quickly.) Cool completely in pan on a rack, about 15 minutes, then grind in a food processor to a coarse meal, about 40 seconds (you will have about 1 1/4 cups). Leave oven on.
  • Make batter:
  • Stir together self-rising flour, ground coconut, and remaining cup (untoasted) coconut in a large bowl. Beat together butter and sugar in another bowl with an electric mixer at medium speed until pale and creamy, 1 to 2 minutes. Add eggs 1 at a time, beating well after each addition. Whisk 1 cup water into flour mixture, then add egg mixture, whisking just until well blended.
  • Bake bread:
  • Pour batter into loaf pan, smoothing top with a spatula, and bake in middle of oven until a wooden skewer inserted in center comes out clean and top is evenly brown, 1 hour to 1 hour and 10 minutes. Cool bread to warm in pan on a rack, 10 to 15 minutes, then turn out of pan and set right side up on rack to cool completely, about 2 hours more. Cut into 1-inch-thick slices.

  • In the bowl of a stand mixer fitted with the dough hook attachment, add ingredients in the following order: heavy cream, milk, egg, sugar, cake flour, bread flour, yeast, and salt. Turn the mixer on to the lowest setting to bring the dough together. Knead on low speed for 15 minutes. If needed, turn off the mixer to bring the dough together with a rubber spatula.
