COCONUT CRUMB CAKE
Coconut Crumb Cake is one of those recipes you never quite believe. To begin with, it has only seven ingredients. That's not terribly unusual for a cake, but a box of vanilla wafers and a package of coconut at the top of the list is unusual.

- 1. Ingredients 1 (12-ounce) box vanilla wafers 1 (7-ounce) can coconut 2 cups sugar 1 cup pecans, chopped 6 eggs 2 sticks butter, melted 1/2 cup 2% low-fat milk
- 2. Instructions 1. Preheat oven to 325F. Grease and flour a Bundt pan. 2. Place vanilla wafers in a food processor and pulse until fine crumbs. 3. Combine crumbs, coconut, sugar and pecans in a bowl; mix well. 4. In a medium bowl, whisk together eggs, butter and milk. 5. Pour egg mixture into dry ingredients and mix well (batter will be thick). Pour batter into prepared pan. Bake 1 hour and 35 minutes. Serves 20.
VANILLA WAFER CAKE II
This cake uses crushed cookies instead of flour. It is a great cake for kids: they will love crushing all those cookies.

- Preheat oven to 300 degrees F (175 degrees C). Grease and flour a bundt pan.
- Cream butter or margarine; add sugar, and beat until smooth. Add eggs, one at a time, beating well after each addition. Stir in crushed vanilla wafers alternately with milk. Add coconut and pecans, and mix until blended. Pour batter into prepared pan.
- Bake for 1 1/2 hours. Cool.

COCONUT CRUSTED CRAB CAKES
Steps:
- Lime Dipping Sauce, recipe follows
- Put the crabmeat in a large bowl and add the mayonnaise, scallions, bell pepper, ginger, salt, and pepper and gently combine using a rubber spatula. Add the 1/2 cup coconut and 1/2 cup panko and gently fold in. Divide the mixture into 8 mounds and form into patties about 3-inches in diameter and 3/4-inch thick. Put the patties on a large plate, cover with plastic wrap, and refrigerate 30 minutes or longer.
- When you are ready to fry the crab cakes, combine the 1 cup of coconut and 1 cup of panko in a shallow container. Lightly dredge the patties in the crumbs, shaking off any excess. Put 2 large nonstick skillets with over medium high heat. Add about 3 tablespoons of oil to each pan. When the pans are hot, place 4 patties in each pan. Turn the heat down to medium and fry the cakes until golden and heated through, turning once with a spatula to brown both sides, about 4 minutes per side.
- Transfer the crab cakes to plates, serving 2 to each person, accompanied by ramekins of sweet chili sauce and lime wedges.
- Whisk together all ingredients in a small bowl.

- Cream butter and sugar until fluffy.
- Blend in crushed wafers and baking powder.
- Beat in eggs, one at a time.
- Stir in pecans and coconut.
- Turn into a greased and floured 9-inch round cake pan.

- Cool.
- Cut into 6-8 wedges.
