COCONUT-LIME MARINATED AND GRILLED SHRIMP
The quick and easy marinade in this recipe is a great way to use up that leftover coconut milk you have in your refrigerator. It adds a touch of sweetness to grilled shrimp and only takes 30 minutes to infuse tremendous flavor into your next dinner. Serve with steamed white rice or cold rice noodles for a light but delicious meal.

Steps:
- Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.
- Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges. Reserve for serving.
- Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels; don't worry if the coconut milk has hardened while it was in the refrigerator. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
- Top with the sliced scallion and serve with the reserved lime wedges.
RED COCONUT CURRY WITH SHRIMP
Easy to make red coconut curry. Serve with jasmine rice or basmati rice.

- Heat oil in a large pan over medium-high heat. Add onion, bell pepper, and jalapeno and cook until softened, 4 to 5 minutes. Use a slotted spoon to transfer veggies to a bowl and set aside.
- Reduce heat to medium and add coconut milk, curry paste, brown sugar, and fish sauce to the pan. Whisk together and bring to a gentle boil.
- Combine cornstarch and water in a small bowl; whisk to dissolve. Add to sauce and simmer, stirring occasionally, until thickened, about 5 minutes.
- Pat shrimp dry and add to the sauce along with the cooked veggies. Allow curry to simmer gently, stirring occasionally, until shrimp are cooked through and opaque, 3 to 5 minutes. Top with Thai basil and serve with lime wedges.

STEAMED SHRIMP WITH LEMON GRASS-COCONUT SAUCE

- Trim ends from lemon grass, then bruise 3 stalks all over with back of a knife. Cut in half and place in saucepan with nam pla. Squeeze juice of 2 limes into pot, then toss in lime rinds. Top with shrimp, cover tightly, and turn heat to medium-high. Cook for 5 to 10 minutes, or until shrimp are pink and firm. Remove shrimp and chill.
- Remove hard outer layers from remaining lemon grass stalk and mince tender core; you will get about a teaspoon. Combine this with chili, coconut milk, sugar and saffron in a small saucepan over low heat. Cook, stirring occasionally, until mixture is a uniform yellow. Remove chili and chill. Cut remaining lime into wedges.
- Taste sauce and add salt if necessary. Serve cold shrimp topped with cold sauce and accompanied by lime wedges.

COCONUT SHRIMP I
These crispy shrimp are rolled in a coconut beer batter before frying. For dipping sauce, I use orange marmalade, mustard and horseradish mixed to taste.

- In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Place 1/4 cup flour and coconut in two separate bowls.
- Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.
- Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, remove shrimp to paper towels to drain. Serve warm with your favorite dipping sauce.

- Combine ½ cup lemonade and ¼ teaspoon coriander for marinade. Add shrimp and marinate for a minimum of 30 minutes.
- Prepare vinaigrette by placing ½ cup lemonade, shallot, and remaining coriander in a saucepan over medium-high heat. Reduce to ¼ cup, about 15 minutes. Cool. Whisk 1½ tablespoons of olive oil into the lemonade reduction and season with salt. Chill.
- Remove shrimp from marinade and drain. Discard marinade. Season shrimp with salt and black pepper. Dredge in flour and shake off excess. Dip in egg white and drain excess. Press shrimp into coconut to coat on all sides.
- Heat remaining olive oil in a non-stick skillet over medium heat. Add shrimp and sauté on first side until golden brown, about 3-5 minutes. Carefully turn shrimp over and sauté until shrimp are cooked through, about 3-5 minutes. Hold warm.
- Add parsley to vinaigrette and whisk to blend. Place a small bed of four romaine leaves on each serving plate. Top with lemon slices and star fruit, if using. Drizzle with vinaigrette. Add shrimp and serve.
