COCONUT OIL ON TOAST

A senior Malaysian chef taught me this recipe on my travels. It has been handed down through the generations and never been published until now.

Steps:

  • Make sure that the toast is toast, not bread, by putting it in the toaster before you put the coconut oil on it.
  • Spread coconut oil on the toast.
  • Serve warm (or just eat).

This toasty bread has a wonderfully sweet and buttery coconut topping that's simply scrumptious. "It's easy to make and so yummy," says Betty Checkett of St. Louis, Missouri. "Enjoy it with a cup of coffee at breakfast or for a snack anytime of day."

Steps:

  • In a bowl, combine the coconut, sugar, butter, egg and vanilla; mix well. Spread over each slice of bread; place on ungreased baking sheets. Bake at 350° for 15-20 minutes or until lightly browned.

Steps:

  • In a large bowl, beat eggs; add milk, sugar and cinnamon. Add bread, a few slices at a time; let soak for 1 minute on each side. Coat both sides with coconut. Place on greased baking sheets. , Bake at 475° for 5 minutes on each side or until golden brown and cooked through. Serve with syrup if desired.

  • In a small saucepan over low heat, stir together the coconut oil, milk and vanilla extract until warm and combined. Pour into a large mixing bowl and add the peanut butter and sugar. Stir until well combined (small peanut butter lumps are ok). Add the flour, baking soda, baking powder and kosher salt and stir with spatula until combined into a cohesive dough.
  • Remove the bowl with the dough from the refrigerator. Make 24 1 1/2 tablespoon-sized balls (using a size 40 cookie scoop, if you have it) and place them onto the baking sheet. Roll the balls between your hands to make them as spherical as possible. Place them 2 inches apart on the baking sheets.
