COD IN RED WINE
Steps:
- Heat the olive oil in a skillet. Add onion and garlic and begin to saute. Cover and cook until softened, about 5 minutes (if onions begin to stick add a spoonful of water to the skillet and continue to cook).
- Add the red wine, clam juice, capers, and thyme and bring liquid to a boil. Simmer over low heat until reduced to 1/2 cup.
- Right before serving bring the sauce back to a simmer and add the fish. Cover and cook over very low heat until the fish is just cooked through, about 5 minutes. Remove from heat and swirl in butter and parsley (don't worry if fish falls apart).
- Adjust seasoning and spoon in deep plates over rice, potatoes or garlic croutons.

- Preheat the oven to 375 degrees (F).
- FOR THE WINE SAUCE:.
- Warm the oil in a large, oven safe, saute pan over medium heat. Add the pepper flakes and garlic and saute for 1 minute, or till garlic is fragrant. Add the cherry tomatoes and cook, stirring every now and then, until they are soft & blistering, but keep their shape, 9 to 12 minutes.
- Add inside the white wine, stir, and allow the sauce to come to a mild simmer. Stir in the basil, lemon juice, lemon zest, salt, and pepper and cook for two minutes, then transfer the sauce to a bowl, and set aside.
- FOR THE COD;.
- In the same pan, heat oil over medium heat. Season both sides of the cod fish with salt and pepper. Add the seasoned cod to the pan and cook until golden brown, approximately 5 minutes.
- Carefully flip the cod over and place the pan in the oven to continue cooking for an additional 5 minutes, or until the fish is cooked.
- Pour the white wine tomato basil sauce over the cod and serve.

- Place tomatoes in a blender. Cover and process until pureed., Pat fish dry with paper towels. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add cod fillets; cook until surface of fish begins to color, 2-4 minutes on each side. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add onions; cook and stir until tender, 2-4 minutes. Stir in seasonings and pureed tomatoes; bring to a boil. Add cod; return just to a boil, spooning sauce over tops. Reduce heat; simmer, uncovered, until fish just begins to flake easily with a fork, 5-7 minutes. Serve with pasta. If desired, sprinkle with parsley.

- Whisk together 1 cup hot water and demi-glace in a small bowl until dissolved; set aside. Cook bacon in a high-sided large skillet over medium, turning occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a plate lined with paper towels, reserving drippings in skillet.
- Add quartered mushrooms, onion, and 2 tablespoons butter to bacon drippings in skillet. Increase heat to medium-high, and cook, stirring often, until mushrooms are lightly browned, about 10 minutes. Stir in wine, and bring to a simmer; cook 5 minutes. Stir in demi-glace mixture, ketchup, maple syrup, onion powder, garlic powder, chili powder, and Creole seasoning. Return to a simmer over medium-high. Reduce heat to medium; and gently simmer, stirring occasionally, until sauce is thick enough to coat the back of a spoon, 5 to 7 minutes. Remove from heat, and stir in 1/2 teaspoon salt. Cover sauce, and keep warm.
- Heat oil in a large nonstick skillet over medium-high. Sprinkle fillets with remaining 1 1/2 teaspoons salt. Place fillets in hot pan; cook until edges are golden brown, about 5 minutes. Carefully turn fillets over; add remaining 1/4 cup butter. Tilt skillet so butter pools, and cook, basting fish often, until just cooked through, about 3 minutes. Remove from heat.
- Place 1 fillet in each of 4 shallow bowls. Spoon about 1/2 cup sauce over and around each fillet. Top evenly with crumbled bacon and remaining thinly sliced mushrooms. Garnish with herbs.
