COFFEE AND SPICE SMOKED TRI-TIP

This is a version of a recipe that was emailed to me by Williams-Sonoma. The recipe called for their coffee and spice rub. Fortunately, I was able to develop an alternative to the purchased rub. Serve this with flour tortillas, Spanish rice and recipe #237848.

Coffee and Spice Smoked Tri-Tip image

Steps:

  • To prepare the rub: Place the ingredients in a heated heavy skillet.
  • Shake together and allow to toast for 1 minute or until mixture begins to release a strong aroma.
  • Pour into a spice or coffee grinder and grind to a coarse powder.
  • Rub the tri-tip on all sides with the spice rub; sprinkle with salt to taste.
  • Place meat in a sealable plastic bag, seal and place in the refrigerator for 8 hours or overnight.
  • Remove the meat from the plastic bag and place on rack of smoker that has been preheated to 225deg.
  • Combine the maple syrup and hot sauce; begin basting every 1/2 hour after the first hour.
  • Smoke the tri-tip until an instant read thermometer inserted into the center registers 130deg. for medium-rare (approximately 2 to 3 hours).
  • Transfer the meat to a carving board, cover loosely with aluminum foil and let rest for 20 minutes.
  • Slice the meat thinly across the grain and arrange on a warmed serving platter, sprinkle with salt.
  • Serve with chipotle guacamole and Spanish rice.

1 teaspoon dried ancho chile powder
1/2 teaspoon crushed red pepper flakes
2 teaspoons coriander seeds
2 teaspoons cumin seeds
1/4 cup maple syrup
1/4 cup hot sauce

Spice Rubbed Tri-tip image

Steps:

  • Preheat the grill to medium.
  • Sprinkle each seasoning onto a cutting board. Take the tri-tips and roll them over the sprinkled seasonings, making sure to coat all sides evenly.
  • Place the tri-tips on the grill at a 45 degree angle to establish grill marks and cook about 35 minutes, or until desired doneness. Remove the tri-tips from the grill and let the meat rest about 2 to 5 minutes before slicing. Serve with your favorite side dishes.

1 tablespoon Santa Maria-style seasonings
1 tablespoon BBQ spice (recommended: Red Barron BBQ Spice)
2 (4-pound) tri-tips, trimmed

ALL-PURPOSE CALIFORNIA BEEF RUB

A good rub makes grilling or roasting easy. This one combines the best of the salt-pepper-garlic notes of Santa Maria-style barbecue with the depth of coffee and clove. Diners will be hard-pressed to place its complex flavor until you tell them the components. The rub is easy to double and keeps for a long time in a jar or a zipper-lock bag. It should stay on the meat for at least two hours, but overnight is best.

  • In a 3-qt. slow cooker, combine coffee, sugar, chocolate syrup and extract. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to slow cooker. Cook, covered, on low 2-3 hours., Discard spice bag. If desired, serve coffee with cinnamon sticks.

  • Preheat the smoker. Preheat your smoker to 225 degrees F. I like to use a strong wood like oak or hickory.
  • Season the meat. Season the tri tip on all sides with the Beef Seasoning or equal parts salt, pepper, or garlic powder. Lightly press the seasoning into the meat.
  • Place in the tri tip directly on the grill grates of your smoker. Close the lid and smoke until the internal temperature is within 5-10 degrees of your target final temperature (115 degrees F for a rare roast, 125 for a medium rare roast, 135 for a medium roast, 145 for a medium well roast, or 150 for a well done roast).
  • Preheat a cast iron skillet for searing. When your tri tip is near the correct internal temperature, preheat a cast iron skillet over high heat. Remove your tri tip from the smoker.
