Coffee Walnut Muffins image

Steps:

  • Dissolve coffee in hot water and add milk or cream, beaten egg and oil.
  • Stir flour, baking powder, salt and sugar together and stir in the nuts.
  • Pour the liquid ingredients into the dry and mix only to moisten.
  • Spoon into greased muffin tin and bake 375F degrees for 15-20 minutes.

1 tablespoon instant coffee
1/2 cup hot water
1/2 cup milk or 1/2 cup cream
1 beaten egg
1/2 cup oil
1 1/2 cups flour
3 teaspoons baking powder
1/3 cup sugar
1 teaspoon salt
1/2 cup chopped walnuts or 1/2 cup chopped pecans

COFFEE CAKE MUFFINS

Always a fan of coffee cake muffins, but tired of paying more than $2.50 every morning for a half-decent one (over $15 per week), I decided to create a recipe for home. It is imperative that you use whole milk and that you carefully fold the ingredients together to have the right consistency for your muffins.

Coffee Cake Muffins image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix then sift flour, sugar, cinnamon, baking powder, and salt together in a large bowl.
  • Mix milk, butter, eggs, and vanilla extract together in a large bowl with an electric mixer. Carefully fold in flour until combined but slightly lumpy. Pour batter into the prepared muffin tins, leaving a little room at the top for muffins to rise.
  • Combine flour, melted butter, sugar, brown sugar, pumpkin pie spice, and salt for the topping in a bowl; mix until crumbly. Add a generous amount on top of each muffin.
  • Bake in the preheated oven until tops spring back when lightly pressed, 20 to 30 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

These are my favorite muffins to serve with a cup of coffee or a tall glass of cold milk. Not only are they great for breakfast, they make a tasty dessert or midnight snack. Cappuccino Muffins image

Steps:

  • In a food processor, combine the spread ingredients; cover and process until well blended. Transfer to a small bowl; cover and refrigerate until serving., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread.

Steps:

  • Preheat oven to 350.
  • Grease and flour 12 muffin pan cups.
  • Cream the butter with the sugars, coffee and vanilla.
  • Beat together the eggs and milk.
  • Combine the flour, salt and baking powder.
  • Alternately add the wet and dry ingredients to the butter mixture.
  • Stir just to combine.
  • Add the chips and nuts.
  • Fill the tins full.
  • Bake for 20-25 minutes.
  • Cool 5 minutes, then remove and cool on racks.

  • Preheat oven to 400°. In a small bowl, combine brown sugar, pecans and cinnamon; set aside. In a large bowl, whisk flour, sugar, baking powder, baking soda and salt.
