COLA FRUIT AND DATE LOAF
--Adopted Recipe-- The original submitter says that this fruity loaf showed up in Coke and Seven-Up cookbooks. The recipe was adapted from "Cooking With Coke" - a publication of the Coca Cola Company. Be sure to make a day ahead of time, because it is best the next day.

Steps:
- Preheat oven to 350 Fahrenheit.
- Generously grease a 9 by 5 inch loaf pan.
- Chop dates.
- Heat cola to boiling. Remove from heat and stir in dates, mixing very well.
- Stir in sugar and oil. Cool while preparing other ingredients.
- Stir dry ingredients together and add to cola mixture. Stir in egg, extract and nuts.
- Spoon batter into pan. Bake about 1 hour until cake tests done. Cool on a rack for 20 minutes then remove from pan and wrap.
- Store overnight before slicing.

For chocolate lovers! This is a great bread - moist and rich. My mom served it at my bridal shower, and I now love making it for friends at the holidays.

Steps:
- Place dates in a small bowl with boiling water and baking soda. Let stand until cooled. Melt chocolate chips with margarine in a bowl over a pan of simmering water, or in the microwave. Stir frequently until smooth.
- In a medium bowl, beat egg and stir in sugar, salt and vanilla. Stir in the melted chocolate and date mixtures. Combine the flour and baking powder, and stir into the date mixture until just blended. Scrape into a greased 9x5 inch loaf pan. Let stand for 20 minutes while you preheat the oven to 350 degrees F (175 degrees C).
- Bake for 1 hour in the preheated oven, until a toothpick inserted into the crown of the loaf comes out clean. Cool for 10 minutes before removing from the pan. Wrap in aluminum foil, and refrigerate overnight, as the loaf will cut better on the second day.

DELICIOUS DATE LOAF
This recipe belongs to Anna Olson, a very famous Canadian chef. I reduced the original amount of sugar and oil just to make them it a little lighter. It works really well for muffins, too. I do not recommend the use of baking paper cups, because the muffins will stick to them.

- Simmer chopped dates and orange juice for less than a minute. Remove from heat a let cool down.
- In a separate bowl, mix flour, sugar, baking soda, baking powder, salt and cloves and set aside. In another bowl, whisk egg and oil.
- Add egg mixture and dates to flour mixture and mix until blended. It is very important do not over mix this batter; stir in raisins. Pour batter into greased loaf pan or muffin tin and bake for approximately 45 mins or until tooth pick comes out clean.

- Set oven at 180 degrees C or 350 degrees F.
- Combine dates and sodium bicarbonate in a mixing bowl.
- Pour in boiling water and mix. Let stand for 5 minutes.
- Add butter and mix until it melts.
- Add egg, sugar and flour and mix well.
- Place in a well greased loaf pan and bake for 45 minutes or until cooked.
- Turn out onto a cooling rack.

- Heat oven to 350F, lightly grease a loaf pan.
- Mix the dates, butter& boiling water, set aside& cool.
- When cooled mix in the beaten egg& sugar.
- Mix the flour, baking soda& salt together.

DARK COLA DATE LOAF
For date-lover's, this is a moist and rich it tastes like a fruitcake, do not overbake or the cake will be dry, this may also be baked in two small smaller loaf pans which is what I did when I made this cake ;-)

- Set oven to 350 degrees.
- Grease one 9x5-in loaf pan or a 2-qt Bundt pan.
- Chop the dates.
- In a saucepan, heat Cola to a gentle boil; remove from heat.
- stir in the chopped dates, mixing very well.

- Preheat the oven to 350°F.
- Coat a 9" x 5" loaf pan with nonstick cooking spray.
- In a medium saucepan, bring the cola to a boil over medium-high heat.
- Remove from the heat and stir in the dates, brown sugar, and oil; mix well then set aside to cool.
- In a medium bowl, combine the flour, baking soda, baking powder, and cinnamon; stir until well combined.
- Add to the cola mixture then stir in the egg and vanilla until well combined; spoon into the loaf pan.
- Bake for 55 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean.
