Steps:
- Sift dry ingredients into mixing bowl and nest the flour mixture.
- Add most of buttermilk.
- Cut in the lard.
- Begin squeezing the lard and flour in the milk until thoroughly mixed.
- Add the rest of the buttermilk if needed and mix.
- Turn on to floured board.
- Knead until consistency desired.
- Cut into biscuits.
- Place on a lightly greased baking sheet.
- Bake in a preheated 450°F oven for 12-14 minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- In a bowl, mix the flour, baking powder, baking soda, salt, and sugar. Cut in 1/2 cup butter until the mixture resembles coarse crumbs. Mix in the buttermilk. Turn out onto a lightly floured surface, and knead 2 minutes. Transfer to an ungreased baking sheet, roll into a 6x6 inch square, and cut into 12 even sections. Do not separate.
- Bake 15 minutes in the preheated oven, until a knife inserted in the center of the square comes out clean. Separate into biscuits, and serve hot.

1960 ORIGINAL KENTUCKY BUTTERMILK BISCUIT
This is an old recipe--I will not tell where from--but it is 1960 original Kentucky biscuit scaled down from an original I have. It is absolutely to die for. You will never make another biscuit after this.

- Mix flour, baking powder, baking soda, and salt.
- Cut in shortening.
- Add buttermilk; mix well.
- As told in recipe, look for a texture like "velvet". If sticky, dust with flour and work till smooth as velvet and either roll out by hand or on a floured surface ½-inch thick and cut.
- Bake at 450°F for 15-25 minutes on a lightly sprayed pan. Depending on oven, just make it golden brown. (Brush tops of biscuits with butter when you take them out of oven for a nice finish and taste).

Steps:
- Mix flour, baking powder, baking soda, salt and sugar in a mixing bowl.
- Cut in butte ror shortening with pastry blender until mixture resembles coarse crumbs.
- Add buttermilk, mix quickly to make a soft dough.
- Turn out onto lightly floured surface. Knead a few times to make a soft dough, don't overknead or the biscuits will turn hard and dry.
- Roll out to a 6 inch by 6 inch square. Place on ungreased baking sheet.
- With knife, cut dough into 12 even portions. Do not separate.
- Brush on melted butter, bake at 400°F until golden, about 15 minutes. Dust with flour if desired, when biscuits come out of the oven.
- Serve piping hot with butter, jam or honey.

COLONEL SANDER'S KENTUCKY FRIED CHICKEN
While I'm not claiming it tastes just like the KFC recipe, this is truly an AWESOME recipe for fried chicken!! My mom has been making this since I was a wee little one, and I still absolutely LOVE it! My whole family really enjoys this chicken. The ingredients are a little different, but don't let that scare you. Make it once, and you'll be hooked! Prep. time includes refrigeration time.

- In small bowl, combine first 6 ingredients and stir until smooth, thick paste is formed.
- Spread evenly over chicken.
- Place coated chicken in large bowl, cover tightly, and refrigerate for at least 2 hours.
- Pour oil in large, heavy skillet or deep fryer to at least a 3-inch depth, and heat to 425 degrees.
- Meanwhile, place soda water in bowl, and dry pancake mix in a seperate bowl.
- Place chicken in soda, then dredge with pancake mix.
- Set aside to dry a few min.
- Fry a few pieces at a time uintil browned (about 5 minutes), and place on large baking sheet.
- Bake, uncovered, for 30 minutes at 350 degrees.
COLONEL SANDERS' KENTUCKY WHIPPED BUTTER
This is my personal recipe for Kentucky whipped butter, served with my hot Kentucky biscuits or buckwheat cakes.

- Add 2 sticks cut up softened butter to a mixing bowl.
- Beat until well beaten.
- Begin adding buttermilk slowly.
- Beat until fluffy.
- Scrape loose the first solid butter clinging to the bowl, then beat until there are no solid lumps in the whipped butter.
- Serve with my hot Kentucky biscuits.
- Store unused portion in refrigerator, tempering and whipping before serving again.
